Calçotada festival with wines and sherry from Gonzalez Byass brought to you by Tabanco

The Calçotada is a winter food festival, celebrating the harvest of Calçots (pronounced Cal-sots) in Catalonia. Calçots are a milder and slimmer version of an onion, almost a cross between a spring onion and a leek. Once cooked over coals they take on an incredibly sweet flavour. Following tradition we will be cooking these over an open fire ready to be peeled and dipped in our home made Romesco Sauce. To wash these down we will be serving wine from a Porrón, a small quirky wine pitcher with a spout, that looks a lot like a little watering can, often poured at arms length into the mouth! The idea is that the spout is used to pour the wine into the drinkers mouth without the vessel touching the lips, the more skilled the drinker the further away the Porrón. This can be a messy and entertaining affair so please don’t worry about dressing up in your white tie or ball gowns for this one. Oh, and don’t worry, we will have bibs…sounds fun, right!?

 



However, it won't end there! We will follow the Calçots with a hearty recipe from Aragon called Chilindrón. Tradtionally this is a chicken, tomato and pepper stew, but we will be putting our own twist on the classic and pairing it with some fabulous wines of Toledo.

To finish we have teamed up with Jack’s Gelato to show you the delight of pairing a rich and decedent Pedro Ximenex sherry from Gonzalez Byass (the famous producers of Tio Pepe) with beautiful handmade artisan ice-cream.

Fire cooked Calçots with fresh Romesco Sauce - served with Vilarnau Cava (Porrón optional)

Pollo al Chillindrón, Paella de Verduras, Perejil - Charred Chicken, Chilindron sauce and a white paella - served with Finca Constancia Parcela 23 Tempranillo or Parcela 52 Verdejo (Porrón optional)

Helado de Vainilla con Pasas de Malaga y miga de avellana (Vanilla Ice Cream, courtesy of Jack's Gelato, with Malaga Raisins soaked in PX and an almond crumb) - served with Gonzalez Byass Nectar Pedro Ximenez
