On the nose, warm hints of spices (cinnamon, vanilla). On the palate it is round and rich in tannins, developing towards a lush and lingering aftertaste, in which the aromatic overtones of the oak are revealed.
Amber with flashes of mahogany. The floral bouquet develops into spicy aromas on the palate producing a very rich feel. Its aromatic harmony is the sign of a fully-fledged cognac.

A splash of water releases more oiliness, like linseed oil, a gentle waxiness, and a burst of perfumed, aromatic carbolic soap, and finally, a whiff of crème brulee
TASTE:
A soft, oily, mouthcoating texture leads into a rich, sweet, smoky palate, with hints of oak moss, treacle, aniseed lozenges and a lovely, sweet, woody/balsamic flavour. This is then followed by smoked apricots and eucalyptus oil
Finally comes a lingering, sweet/smoky aftertaste, with a touch of cumin, cardamon and the merest hint of coconut
Bottled in humidity, this rare small batch 19-year-old Ardbeg is arguably the most tropical dram to leave the Distillery.
Notes of fresh GREEN PEPPERS, SMOKED MANGO and GUAVA mingle with MAPLE BACON on the nose. A deep smokiness gives waves of ANISEED, burnt HEATHER, and SPICED CHIVE. A satisfyingly long, sizzling finish brings with it notes of WARM TOFFEE FUDGE and SMOKED BUTTER.

Gabriel Boudier Passion Fruit Liqueur is a fresh and popular liqueur, especially during the warmer months. This fruity, tropical liqueur has bold passion fruit aromas with notes of mango, lychee and peaches.
Jung & Wulff Barbados is an 86-proof, full-bodied, buttery, aged rum that exemplifies its Barbados terroir. Highly acclaimed, it is widely enjoyed in cocktails, neat, or on the rocks. Early on the palate is a range of tastes from dark chocolate, to dried fruits, to burnt sugar. Creamy and robust, it is more bittersweet than sweet, deeply cocoa-like and deliciously rich. It is a powerful yet elegant rum true to the character of Barbados.
There are so many complex layers of flavour, and it will be different for everyone. But, our blender Shona Macleod gets a gentle peat smoke on the first sip which reminds her of island home fires burning when she was growing up. It comes along with a toasted maltiness. She can also taste homemade apple sauce and smell machair flowers, particularly white clover which springs up on our west coast every summer. Mixed spices appear, and an old-fashioned sweetness from things like candied ginger, vanilla, and honeycomb. Finally, there’s a long, clotted-cream note, mixed with a lasting sense of new leather.

Harrison Wood, blender at the Isle of Harris Distillery, describes his tasting notes of The Hearach Oloroso Cask Matured as “Initial winter aromas of cinnamon, orange peel, and cloves which remind me of Christmas at home. There are green notes of herbs and the nostalgic creaminess of white chocolate from childhood days. When sipped, I can taste walnuts and fireside wood smoke. The dram develops with a hint of thyme from my kitchen, closely followed by dried oranges. Spices then come through, like vanilla pods and a subtle sense of cloves, before a long leather and liquorice finish."

Foraged by Hand
We climb the cliffs along our shoreline to sustainably harvest native Rock Samphire, only by hand and only in season. It’s really worth the effort!
Amongst our Rock Samphire, we use other botanicals such as lavendar, citrus fruits, cardamom and lemon verbena.

The base spirit used to make Minke Gin is derived from whey, produced from our 8th generation family farm near Galley Head Lighthouse (and other West Cork farms). This gives a unique velvety texture and mouthfeel to each delicious drop.

One of Scotland's most underrated distilleries, Ardmore produces a robust spirit with a certain earthy smokiness thanks to the use of Highland peat. This expression, matured in second-fill Oloroso butts, combines savoury characteristics of smoked brisket and bonfire with notes of sultana, candied orange peel and pastel de nata.
