Isle of Harris
There are so many complex layers of flavour, and it will be different for everyone. But, our blender Shona Macleod gets a gentle peat smoke on the first sip which reminds her of island home fires burning when she was growing up. It comes along with a toasted maltiness. She can also taste homemade apple sauce and smell machair flowers, particularly white clover which springs up on our west coast every summer. Mixed spices appear, and an old-fashioned sweetness from things like candied ginger, vanilla, and honeycomb. Finally, there’s a long, clotted-cream note, mixed with a lasting sense of new leather. It will be a lightly peated dram, at around 12-15ppm

Isle of Harris
Distilled, matured, married and bottled on the Isle of Harris, The Hearach Oloroso Cask Matured is bottled at 46% ABV, no colour added, and non-chill filtered with the spirit lightly peated at 12-15ppm matured in casks hand-picked for quality from the respected Bodega José y Miguel Martín in the beautiful Andalusia region in southern Spain. Harrison Wood, blender at the Isle of Harris Distillery, describes his tasting notes of The Hearach Oloroso Cask Matured as “Initial winter aromas of cinnamon, orange peel, and cloves which remind me of Christmas at home. There are green notes of herbs and the nostalgic creaminess of white chocolate from childhood days. When sipped, I can taste walnuts and fireside wood smoke. The dram develops with a hint of thyme from my kitchen, closely followed by dried oranges. Spices then come through, like vanilla pods and a subtle sense of cloves, before a long leather and liquorice finish."

COLOUR : Bronze AROMA : Fresh and clean, with hints of pine resin, aniseed, sea spray and lavender soap- very gentle, very restrained, and rather elegant for an Ardbeg. With water, there is a distinctive, flinty minerality, along with subtle hints of sweet peat smoke, malted barley, and a touch of toasting bread. TASTE : A beautiful, creamy texture is followed by a lovely combination of flavours, with aniseed toffee, café latte, fennel and gentle antiseptic soap. The peat smoke is present, but in a very restrained manner, and leads into a lingering aftertaste with chewy oak, cocoa powder and tar. The same local coastline is home to the unique botanical that gives Minke Gin its distinct flavour profile. Foraged by Hand We climb the cliffs along our shoreline to sustainably harvest native Rock Samphire, only by hand and only in season. It’s really worth the effort! Amongst our Rock Samphire, we use other botanicals such as lavendar, citrus fruits, cardamom and lemon verbena. Minke Spirit The base spirit used to make Minke Gin is derived from whey, produced from our 8th generation family farm near Galley Head Lighthouse (and other West Cork farms). This gives a unique velvety texture and mouthfeel to each delicious drop. For Minke Gin we go full circle, grass to glass, harvesting nature at its best.

Aged in bourbon casks and then finished in genuine old tawny port pipes for 2 years. These are no ordinary casks, though - they have been used by Symington to mature tawny port for around 50 years. Rich but balanced aromas of red berries, sweet honey and rich toffee develop into aspects of light fruits and nuts on the palate and an abiding finish of smooth fruit salad.

Isle of Harris Distillery
The award-winning Isle of Harris Gin is made in Tarbert, every drop distilled in a small copper gin still known as 'The Dottach', before being bottled and sealed by hand. Refreshing, with good balance between the bitter juniper and pine and the sweet fruit flavours of mango, grapefruit and orange. A green herb flavour of crushed coriander develops. Distinctive and smooth with a dry, flinty taste.
