A few days on skins then cold settled before racking. Spontaneous fermentation, no enzymes, no fining, minimal sulphur and sulphites. Simon Coulshaw farms biodynamically but isn’t certified. Smoky nose that wavers close to city drains and then to the snuffed wick of a beeswax candle. Formidable acidity carving a chasm of contour through the body of the wine. Blood orange and kumquat, membrillo and thyme. Lime and peach. Even a little kiss of honeycomb toffee, right on the end. It would be voluptuous, were it not for the chiselled structure.
