The grapes from this property give a special elegance to the wine with a very good balance of flavours, colour and structure, and pronounced malbec aromas. The other estate SAN PABLO is at an altitude of 4430 feet (1350 meters) above sea level and is characterized by cold nights due to the proximity of the mountains and its altitude, and the grapes here give the wine a rich intensity in colour, aroma and structure, which help to produce this premium Malbec.

Glorious old vine Mourvedre from the wonderful Yves Falmet (who is as vegan as his wines). Yves has a single, steep vineyard of old vine varieties planted in southern Saint-Chinian. Mourvedre cannot be used 100% and be called Saint Chinian, so this is a Vin de France. Silky, fine and long, with vibrant fruit, great balance and perfect ripeness. An amazing value wine. "Yves Falmet is doing something so special that people should be sitting up and taking notice. Im becoming convinced that he is making some of the most elegant wines in the Languedoc. His 2020 Mourvèdre is yet another confirmation of his almost wizard-like ability to make a cashmere silky, jewelled-fruit wine out of a grape that I usually find stomps in heftily, wearing a scowl, muddy steel-toe-cap boots and thick dark canvas overalls, smoking a Gauloises, smelling of farmyard and uttering not much in an unintelligible mutter. This wine smells of jasmine, violet and pomegranate molasses. Sure, there is a lick of smoke, but its folded into deeply sweet dark fruit blueberry, black fig, blackberry and a sheath of tissue-paper-and-600-thread-cotton-textured tannins". Very silky, fresh flavours and textures in the mouth. Lovely peppery spice on the finish. Full bottle 1,150 g. Certified HVE. Mourvèdre, Grenache, Syrah and Carignan from steep, pesticide-free vineyards in the south of St-Chinian. "A touch of glacé cherry on the nose, crushed ripe raspberries, fine-crushed wet gravel. Unusually fine tannins this really plays in the mouth on tiptoes. Lovely carpaccio layers between the cool red fruit, threaded with rosemary and sansho pepper and sarsaparilla. A particularly delicate expression of St-Chinian, but that's not to say it's insubstantial. If you prefer your reds elegant, this is for you". Good Value. The grapes were whole-bunch pressed, which perhaps adds that greeness underneath the ripe fruit. A more structured, tannic wine than initially expected, but with lovely fruit - delicious wine.

Low yielding, old vines are picked in small parcels and remain separate until final blending. Small batches of grapes are gently crushed and then transferred to five tonne headed down open fermenters. Foot treading is undertaken two thirds of the way through fermentation. The wine is then basket pressed and transferred to a mixture of new and used oak barriques to complete fermentation. The barrel ferments are on aged lees, there is no racking until final blending and no fining or filtration. Dead Arm is a vine disease caused by the fungus Eutypa Lata that randomly effects vineyards all over the world. One half, or an 'arm' of the vine slowly becomes reduced to dead wood. That side may be lifeless and brittle, but the grapes on the other side display amazing intensity.
