You'll find wintergreen and honey, lemon balm, juniper and pears. Soothing sweetness, botanical tonic, aromatic freshness. In spring, it's the wine for asparagus in a honeyed vinaigrette. In summer, it's the wine for courgette flowers stuffed with ricotta and deep-fried with hot honey and lemon drizzled over the top. In autumn, it's the wine for roasted Crown Prince squash stuffed with rosemary and sage goat's cheese; in winter, it's the wine for lentils and beans baked rich in tomatoes almost painfully slowly under a thicket of dried thyme and oregano and then stirred with a sinful extravagance of parmesan.
