Pale yellow colour, with floral and honey hints, it is fresh, balanced, fruity, and with fine bubbles from 14 months bottle ageing. Fun, frothy, delicious, not taking itself seriously, very moreish. Ideal as an aperitif and for accompanying seafood.

Villa Sandi is a beautiful Palladian style villa which dates back to 1622 and lies in the heart of Treviso, at the bottom of the foot of the Valdobbiadene Prosecco DOCG hills. This wine is fruity and flowery with delicate aromatic and citrus hints. Fresh and lively in the mouth. Light bodied and elegant with an agreeably aromatic and fruit persistence. An excellent aperitif to accompany savouries. Ideal with steamed shellfish.

Malvasía, vertical trellis, planted in 1964 – La Arboleda, Uco Valley Direct pressing of 70% of the grapes, that fermented at 13°C in contact with a stems infusion. The other 30% fermented partially with skins. In both cases by tasting, we decide when to remove them to continue fermenting without these, a part in barrels of new French oak until its completion. REST TIME IN BARRELS: Aging on lees with frequent batonnages in both, barrels and tank, for 4 months before blending and bottling.

Properly serious food wine, a Michelin-star classic! Parker 92 Aromas of almond paste, green orchard fruit, citrus oil and pastry cream introduce the latest example of Billecart's NV Brut Sous Bois, a bottling that's based on the 2009 vintage. The oak influence is much less pronounced than was the case with some of the early renditions of this cuvée, and it's really going from strength to strength, revealing a medium to full-bodied palate that's broad-shoulder and structured, with lively underpinning acids. Jancis 17/20 This new cuvee is all vinified in oak but hasn't a hint of obvious oak on the nose. Lovely quality of fizz. Brooding and intense. There is marked density here and excellent balance and persistence. As usual, we are not told on the back label how old this blend may be, just that it is 'respectfully composed' of the three Champagne varieties. But it's impressive wine and I suspect it will not be cheap. Recommended. Edge of green on the nose here. Steady bead. Really quite rich and intense. Quite a meaty nose – but then food smells are coming in from the 67 Pall Mall kitchen! Mathieu Billecart suggests Tete des Moines or Comté as a food match or mushroom risotto ‘but the mushrooms have to be in season’. Lots of impact. I agree with Alistair Cooper MW, as below. "baby brother to Clos St-Hilaire" (only £300 cheaper!!!). I've always loved Sous Bois but the current release sees it "on fine mid-season form" as Bertie Wooster might say. Tasting it recently (March 2022) was like a flashback to a recent tasting at Krug. This is a wine certainly head and shoulders above its status and price. One-third of each variety from selected parcels – older, lower-yielding parcels tend to be chosen for the Sous Bois. 52% grand cru grapes, 16% premier cru (across the whole portfolio; their Meunier isn’t grand or premier cru). One-third reserve wine. Malo blocked. Long lees-ageing (6–7 years). Slightly oxidative style – the most oxidative they make. A richer mouthfeel as well as real bite. A savoury and yeasty note on the nose – almost slight Marmite (yeast extract). The oak is very well integrated and just frames the wine – the subtle note of spice comes in on the finish – slightly cedary note? (AC)"

6 months in stainless steel tanks moving its own fine lees. Attractive yellow colour with golden highlights. Very interesting on the nose, notes of tropical fruits such as passion fruit are perceived. As it opens, lactic notes like butter, or baked bread are discovered.

PRO for Prosecco, VER for Vero (Truly in Italian) BIO for Biologico (Organic). The palate is soft and fresh, offering zippy acidity and a complex array of primary fruit flavours, including peach, pear and apricot. This is enjoyable on its own as an aperitif but also pairs wonderfully with oriental cuisine. All vineyards are situated on gentle hillside slopes in the Treviso province, at an altitude of 250 metres above sea level. The grapes are carefully handpicked in mid-late September when they have reached full maturity, but still retain a high acidity level, giving the freshness and fruitiness typical of Prosecco.

A new cuvée for 2020 from our favourite Champagne House, and created by new MD Benjamin Fourmon who says, 'from the start I set out to create an extra-pure, sugar-free and very expressive champagne. We chose the exceptionally fresh 2013 vintage and aged it for 72 months to produce roundness, power and perfect balance. 35% Pinot Noir, 35% Chardonnay, 30% Pinot Meunier. Reserve wines constitute 24% of the blend, Dosage 0 g/l. Disgorged '2020'.

The cheerful wines of the Mâconnais befit the sunny disposition of its gentle slopes, its warm terracotta rooftiles and the rhythmic chirping of cicadas on summer evenings. This is an excellent entry-point to white Burgundy: soft and rounded Chardonnay showing green apple, lemon oil and almond notes. Unoaked to let the purity of the fruit shine through. This has a strong affinity with roast chicken and turkey.

A generous and balanced palate of sweet rosewater and Turkish delight complemented by the crisp acid Riesling component adding a zesty finish.

A crisp, well balanced champagne with citrus hints on the nose overlaid with touches of brioche and yeastiness. The palate is fresh, clean and lively with a creamy mousse and long finish.

Rustenberg is a well-known producer of high quality Chardonnays; the Stellenbosch Chardonnay embodies their house style. Apricot, coconut and orange peel aromas followed by flavours of marzipan, sponge cake and citrus rounded off with carefully-judged oak and balanced, fresh acidity.

They have been making this wine since 2004 and it is the result of 3 different harvest days in search for good acidity, freshness, intensity in the aromatics, and nice weight in mouth. Wine of elegant colour with shades of bright greenish yellow. Fresh and fruity character, intense and typical, with an interesting floral aroma that brings memories of roses. Vicentini is a family business where Agostino works with his wife, Teressa, and their children Emanuele and Francesca. Based in San Zeno, a village at the mouth of the Val d‘Illarsi which resides inside both the Soave and Valpolicella DOCs, but is outside of their respective Classico zones. But don't let this last point cloud your vision to their outstanding wines produced in two distinct and great terroirs. The first terroir is on volcanic rock within the Valle dei Ciliegi, here the land is largely responsible for their "Valpolicella" and "Soave Casale". The second terroir is on limestone in the commune of Terrelunghe, where Garganega and Trebbiano di Soave are grown for the 'Terrelunghe' Soave. Beautiful, direct wine with tension and intense, spicy stonefruit and citrus fruit which is tangy, salty and stony. Brilliant, brilliant wine. The Casale vineyard is outside of the Classico zone, but consistently produces one of Soave’s most heralded and best loved wines. The fifty year old vines on volcanic soil give very low yields producing a wine of great balance and real interest. The grapes are hand-picked, sorted and de-stemmed before being fermented in temperature-controlled steel vats. Winemaking is hands off and the fruit speaks directly of this wonderful, carefully worked site. Outstanding stuff.
