For nine years he worked for a winery in the south of the Roussillon – Andy Cook’s Mas Cristine and Coume del Mas. Working in the vineyard, cellar and commercial activities – the whole shebang! For four years now he has been employed by a family winery based in Maury - Clos des Vins d'Amour. Who work 25 hectares organically in the west of Roussillon. Mostly in commercial activities, but also working in the cellar. Alongside this, in 2016, Vincent started a new project - Domaine Odyssée. The 3.5ha of vineyards are in Calce and Baixas, in a heart of Roussillon. The sites are small, but unquestionably some of the most beautiful we have seen. Vincent draws on the experiences mentioned above and his time in New Zealand (2011), Argentina (2012) and Bordeaux 2011 to help fully realise what he has there in his exceptional terroir. Vincent works organically, using no weedkillers, no chemical products. He works by hand and with organic fertilizer (he is in conversion right now). He harvests his parcels by himself with friends and family. In the cellar, Vincent’s philosophy is a minimum of intervention – “To keep the fruit and the terroir”. The wines are extracted gently with just a little pump over. No filtration, no fining. The only preservative is a little dose of sulphites in very low quantities at bottling “It is important for me the stabilise the wine in respect of the future customers”.

Crisp, mineral Viognier with hints of peach and apricot, a round satisfying mouth feel and great length. “Before I go any further, note well that this is not a white wine to serve fridge cold. It may not be a big oak bomb but having tasted it really cold and then as it warmed up to room temp, it hit its sweetest spot between 12 and 16 °C (54–62 °F). Like the 2019 of this wine, it's not like any other Viognier you'll come across. It smells of linden blossom and silkworm cocoons and fresh chestnuts and cobnuts. On the colder side, it tastes like sliced white peaches dipped in ice and mint leaves. As it warms, the tension in the wine turns silk and the peaches turn red. There's a cut of smoke that comes and goes like a wind-blown shadow on a white stone wall; and the finish curves back in on itself as if to say, 'let's do it again!'. But it leaves a trail of vineyard mint, the lick of rain-wet stones, a fine thread of bitterness on the finish. Underpriced. This is nowhere near as simple as it sounds when Coulshaw says, 'the aim is to make a clean, fresh wine'. It's transmitting terroir and fruit, loud and clear. Very Good Value. The yield hardly exceeds 20 hl/ha, vines planted at 1.50 m square. The grapes are partly de-stemmed, followed by maceration for a fortnight with light daily pumping over. Aged in old casks of 20 HL. A seamless, gorgeous Grenache-led beauty. An extraordinary dry red Maury that has a texture from heaven, wonderful depth and with a delightful lightness of touch. Utterly delicious.

Simon Coulshaw makes natural wines: no cultured yeast, enzymes, chemical tannins or fining product and farming with respect to the environment, although the domaine isn't certified organic. jancisrobinson.com Review: Full bottle 1,126 g. 65% Grenache Noir, 20% Syrah, 15% Carignan, organically and biodynamically farmed. Out of the 22 ha that Simon Coulshaw has under vine, 16 are in Faugère and 6 in Pézenas. But, as Coulshaw points out, they are more than 30 km from Pézenas, so while vineyards for the appellation are typically on villafranchian and clay-limestone soils or on black, grey and blue schist, this vineyard is on golden schist. (Coulshaw at this point goes into a charming rhapsody about how beguilingly beautiful schist is...) Le Pech Mege is a single vineyard, the most isolated of all his Pézenas vineyards. Then I smell garrigue - cistus, broom heather, wild thyme, the smell of the wind blowing through holm oaks and twisted pines and I am in the south of France. This is the fey child of Roussillon. Point Triple 2022: is a blend of co-fermented whole bunch Macabeu (schist) and Grenache Blanc (clay) seeing seven days skin macération together. After breeding, a portion of Muscat a Petit Grain (clay-limestone) that sees skin macération and whole bunch fermentation for twenty days, is blended with the other portion one month before bottling. This delightful, wild fermented, textural, insanely bright but savoury maceration wine comes in at a digestible 11% abv. Bottled unfined and unfiltered, with a very low dose of sulphites.
