Like a great Provence, but one from an actual great terroir and not just sandy soils. This year Syrah and Carignan joining the Grenache and Mourvedre of the outstanding debut in 2020 which garnered high praise from critics and customers. In the words of one customer "Youll be pleased to know you werent wrong with that Rosé (Dom. des Soulanes Cuvee Rosé). It is one of the best I have ever tasted and Ive tasted a few, many with a much bigger price tag. Actually I prefer it to Garrus (£100), dEsclans (£30). How much more have you got?" Domaine des Schistes
Grown on rocky schist soils in the commune of Estagel. West to north-west exposure. The vineyard is called 'Poux Baly'. A beautiful, bright blend of Vermentino 38%, Grenache Gris 34% and Maccabeu 28% that is utterly delicious and versatile. Medium weight with a fine, fresh length. Harvested at night into small crates and made very naturally and fermented in steel vats, with only one small addition of sulphites before bottling. Malolactic fermentation is blocked to keep the bright freshness.

A big favourite of ours for a decade from one of our handful of world-class Roussillon growers. "It says Mourvèdre on the front label but it's actually only 75% of that rich, spicy variety, apparently, plus 20% Syrah and 5% Grenache. Yield was only 20 hl/ha on pebbly clay-limestone at 150200 m in the middle of the Aspres cru. Aged for 12 months in American oak barriques (20% new). Total SO2 47 mg/l. The back label says 14% but the tech spec says 13.4% alcohol. Deep healthy crimson. Headily scented ripe blackberry cordial (Mourvèdre all right!). Admirably fresh palate with a lightness of touch. Gentle, approachable fruit with an interesting undertow. Racy. (Which is good!) A certain meatiness in Mourvèdre vein but not excessively warm and alcoholic. Quite long. It was created using botanicals that were foraged locally in the spring and summer of 2021 in a bid to capture the essence of the shifting English seasons. Billed as a collectors item The gin was distilled using the companys novo-dimensional distillation system, in which nine variables including temperature, pressure and time can be adjusted for the distillation of each botanical. These separate distillates are then blended together to create the final spirit. With botanicals include lemon balm, hawthorn blossom, nettles and cow parsley flowers, Cambridge Distillery says the gin is elegant with citrus and herbaceous notes. It recommends serving chilled, over ice, or in an extra-dry martini.

At first on the nose, you are like "What even is that?". Whatever it is, you know that you like it. Elegant, subtle fruit is intermixed with gentle herb, earth and savoury charachters. Deep and wonderful. On the palate the wine is elegant and deep again, but not heavy in the slightest. Ruffled fruit and savoury notes with minerality and real finesse. These wines are like no other from the Roussillon. Outstanding. Magnum sized.

Grown on Schistose marls resting on the southern limestone foothills of the Massif des Corbières limit between the Pyrénées Orientales and the Aude. Altitude 220m. A majority of Carignan, very little Grenache Noir, even less Syrah from a 70 year old plot of vines. Manual harvest, wild ferment. Whole bunch maceration for a period of fifteen days, conservation of the cap of damp marc by daily wetting. Very little extraction, rather an infusion. This makes a beautiful light-footed wine. Amazing, bright and red-fruited vigorous Carignan. Like nothing we've tasted before. An utter marvel.

Floral, pretty and minerally fresh red fruits with soft texture and generous fruit. Really delightful Grenache. Vincent Carreras has been working in wine industry for 13 years. For nine years he worked for a winery in the south of the Roussillon Andy Cooks Mas Cristine and Coume del Mas. Working in the vineyard, cellar and commercial activities the whole shebang! For four years now he has been employed by a family winery based in Maury - Clos des Vins d'Amour. Who work 25 hectares organically in the west of Roussillon. Mostly in commercial activities, but also working in the cellar. Alongside this, in 2016, Vincent started a new project - Domaine Odyssée. The 3.5ha of vineyards are in Calce and Baixas, in a heart of Roussillon. The sites are small, but unquestionably some of the most beautiful we have seen. Vincent draws on the experiences mentioned above and his time in New Zealand (2011), Argentina (2012) and Bordeaux 2011 to help fully realise what he has there in his exceptional terroir. Vincent works organically, using no weedkillers, no chemical products. He works by hand and with organic fertilizer (he is in conversion right now). He harvests his parcels by himself with friends and family. In the cellar, Vincents philosophy is a minimum of intervention To keep the fruit and the terroir. The wines are extracted gently with just a little pump over. No filtration, no fining. The only preservative is a little dose of sulphites in very low quantities at bottling It is important for me the stabilise the wine in respect of the future customers.

The Fer Servadou is from Vincent's friends at Coultades du Coustoubi. The '78' moniker comes from both postcodes being added together - 66 for Roussillon and 12 for Aveyron. A verry special wine from ancient plants of two of the rarest and very best vines for Soualnes terroir, Grenache Gris and Carignan Gris. This really does have everything. It's floral, honeyed orchard and citrus fruits added to its sumptuousness, its layers of texture and bright but not too spiky acidity. Very long with great balance and so much interest. Divine stuff that is here in tiny quantities.
