Wildflower
St Florence 2020: Semillon is an Australian Wild Ale refermented with white wine grapes. It is named for Topher and his wife's first daughter and the Saint Florence was a 7th century abbess from Cartagena, Spain. The fruit for the 2020 edition is from Johnno's vineyard (planted 1908) on Tyrrell's estate outside Pokolbin, NSW. 500kg of grapes were picked from this site. Due to the smoke from bushfires this year, Tyrrell's were unable to use any of these grapes for their own wine

Wildflower
St Walter 2020: Black Muscat is an Australian Wild Ale refermented with red wine grapes. It is named for Topher and his wife's first son and the Saint Walter was an 11th century monk from the Loire Valley in France and is the patron saint of vintners. The fruit for this beer comes from an old plot of table grapes at Thornbrook Orchard in Nashdale, NSW. After being hand picked on 25 March the fruit was put into a three week carbonic maceration before racking two barrels of aged Gold onto the semi-fermenting fruit on 16 April 2020. The beer and grapes macerated and refermented together for just under three months. The grapey beer was then transferred off the fruit and washed with barrels of aged Gold before bottling on 29 July 2020 and allowed to condition in bottle for 18 weeks before release.

De Halve
Brugse Zot Brune is a dark brown beer, inclinging towards ruby red. It is brewed with six special varieties of malt, which give the beer a rich and distrinctive aroma. One can discover the scent of honey, almonds, chocolate and even brown sugar. By using the Czech Saaz hop from Zatec, the beer has a complex pallet of roasted malts and a distrinctive flavour. A cider/saison blend produced by adding freshly pressed organic Golden Delicious apple juice to a barrel of our 5 month barrel aged organic saison. Wylde Sky Brewing
This one is tricky as many people will get many different things. A somewhat dank and resiny nose (yet subtle, this is no IPA), followed by a malty mouthful with even chocolate and a touch roast/toast buried deep down. All this believe it or not, in a very fresh feel - with your eyes shut, you could mistake this for a somehow summery beer! I know right? Weird, yet wonderful!
