This wine replicates this tradition in how the grapes are grown, selected and fermented. The Pelegrim NV is a traditional bottle-fermented sparkling wine that is made from Pinot Noir, Pinot Meunier and Chardonnay with reserve wines from previous vintages to give further complexity and a consistent extra dry non-vintage style. The wines are lees-aged in bottle for 36 months to give depth and biscuity aromas which only bottle-fermentation can deliver.

So fine, fruity, fresh and elegant. 99% Clairette Brut, sown with 1% of the freshest Syrah which together give it aromas of white peaches, wild strawberries and red currants. The palate unfolds with these flavours whilst being juicy but oh-so fresh with the finest of tannins. An outstanding effort.

Famously delicate and sexy pink At the March 2022 Taste Champagne (300 wines) I have to say this stood out as one of the most delicious "drinking Champagnes" on show - and there were some very Showy wines on show that day. A huge success for us, easy to forget just how gorgeous it is - firstly it is so very savoury, forget the cherry fruits, it's more like Xmas cake, rhubarb, forest floor, nettle and nutmeg. When the glass is empty the aromas persist. This is Grand stuff, the stuff of deluxe cuvee, truly epic. And a dinner wine too. A cunning counsel for you - don't serve it too cold, err on the cellar-temperature side. March 2022. Of course the whole Billecart range is exceptional and impressive but the 'basic NV is a STEAL! Seriously, super-tight with Silex and citrus, grippy and bracing. On best-ever form.

Saffron Grange
We are very excited to be able to bring you the 2019 Brut Classic Cuvée. This multi award-winning wine has won a 2023 Decanter World Wine Award, an International Wine Challenge and a Wine GB Award and most recently has been named as one of the top 100 UK wines in 2023. 2019 was another outstanding growing year for us in East Anglia and prior to the record-breaking summer of 2022, the hottest temperature ever recorded (a whopping 38.7 degrees) was measured just down the road at the Cambridge Botanical Gardens in July 2019. This wine is made from 50% Pinot Noir, 15% Pinot Meunier and 35% Chardonnay grapes and has been aged for 38 months on its yeast lees. The nose is packed with red apple, red berries and creamy brioche balanced with a palate of vibrant grapefruit, soft stone fruit and a hint of honey. With our renowned flint minerality coming through, this wine has an elegant, yet long finish. We think that this is a delicious and complex sparkling wine a perfect one to enjoy with a classic like Fish and Chips, a Sunday Roast or even on its own as a delicious aperitif.

Full-bodied, layered and multidimensional, the vintage's bright girdling acids are amply cloaked in exuberant, expressive and notably concentrated fruit; so while this Cristal is as tensile and age-worthy as one would expect, it's also impressively fleshy and generous given the year. Concluding with an intensely sapid finish, the 2013 isn't as overtly structured as the muscular, tightly wound 2012: rather, it's the 2013's alliance of cut and flesh, precision and charm that's so compelling this year. This is another banner vintage for what I consider the reigning champion of the region's tête de cuvée bottlings, and it will be worth an effort to acquire."
