Atlantic distillery in Ireland matured this small batch whiskey in bourbon barrels. This expressions shows clean notes of green apples, coconut biscuits, oat cakes and wildflower honey.
Inspired by the Minke Whale, the majestic creatures that swim wild off our Atlantic Ocean coastline. The same local coastline is home to the unique botanical that gives Minke Gin its distinct flavour profile.
Foraged by Hand
We climb the cliffs along our shoreline to sustainably harvest native Rock Samphire, only by hand and only in season. It’s really worth the effort!
Amongst our Rock Samphire, we use other botanicals such as lavendar, citrus fruits, cardamom and lemon verbena.
Minke Spirit
The base spirit used to make Minke Gin is derived from whey, produced from our 8th generation family farm near Galley Head Lighthouse (and other West Cork farms). This gives a unique velvety texture and mouthfeel to each delicious drop.
For Minke Gin we go full circle, grass to glass, harvesting nature at its best.

The worlds favourite liqueur brand acording to global sales across 160 countries. Though if they deducted the unopened bottles at the back of the drinks cabinets of deceased grandparents, one assumes it would rank about 6th.
Finished in barrels from the famous Bordeaux estate Chateau Leoville Barton. The Bordeaux casks lend an element of red fruit, as well as French oak influences.
A minimum of 19 years in former Oloroso Sherry and Bourbon-seasoned casks, then transferred into Madeira casks for a further 2 years. The result is a whiskey awarded ‘Best Irish Single Malt 2013’. It has huge depth that interweaves dried fruit flavors with spicy, aromatic maltiness and subtle nutty raisin notes.
BALLYBANNON farm is in Co. Carlowand the barley was grown by farmer TonyLender.
The barley was peated to 47ppm during malting with peat from Ballyteague, Co.
Kildare, and is matured in a combinationof 39% first-fill US oak; 21% virgin US oak; 21% Premium French oak; and 19% Vin Doux Naturel casks.
