Very rare indeed. A tiny amount for the UK. Ubuntu is organically grown 80% Grenache Gris and 20% Grenache Noir from schist soil over a bed of clay-limestone that sees skin macération and whole bunch fermentation for seven days. This fermenting juice is transferred and left to breed in amphora for five months. Bottled with a very low dose of sulphites, unfined and unfiltered. Amazing tension. This feels like a "light red wine" to us (albeit one with tension and real interest), so that's what we have called it. Amazing, and in limited quantities.

Serious quality. Beautiful wine. Named after the Bruce Springteen song "Promised Land". A wild-ferment wine made from Macabeu, Grenache gris and Carignan blanc. Fermented and aged on lees in barrels for 9 months. It has a complex nose of river stones, quince and buttered toast. The palate combines flavours of pears and citrus with a long, spicy finish. Just brilliant. Top marks.

Pelegrim means Pilgrim in middle English (circa 12th century) and recognises the history of our forbearers that walked the Pilgrim’s Way above our vineyard for centuries on their final leg to Canterbury. This wine replicates this tradition in how the grapes are grown, selected and fermented. The Pelegrim NV is a traditional bottle-fermented sparkling wine that is made from Pinot Noir, Pinot Meunier and Chardonnay with reserve wines from previous vintages to give further complexity and a consistent extra dry non-vintage style. The wines are lees-aged in bottle for 36 months to give depth and biscuity aromas which only bottle-fermentation can deliver.

Deep purple, almost opaque in colour with an expressive nose of black fruits, pepper, cinnamon, spice and violets. A seductive palate of dark hedgerow fruits, very open and welcoming with an explosion of fruit and spice. Mineral undertones. This is the magnum size.

Almost an introduction to 'Orange' wine. The Melissaki variety, unknown and forgotten by many, can be found in vineyards at the foothills of Mount Psiloritis. After sourcing it from its place of origin, we planted it in 2010 in a family-owned vineyard, called “GERODETI”, hence the wine name. Intense herbal aromas such as lemon balm surrounded by notes of white fleshed fruit. Elegant on the palate, the wine combines a crispy mouth with a remarkably dense texture.

Francois Xavier AKA 'FX'. FX was vineyard manager for Tom Lubbe at Domaine Matassa for five years. He spent a further year with Domaine Danjou-Banessy. After such time this local lad set up in Espira to make his own wholly exciting wines. Whole bunch fermentation in stainless-steel tanks for 5 days for this beautiful Mourvedre from very old wines. On the morning of the 6th day the grapes were pressed, and the juice transferred back to stainless-steel tanks to complete fermentation. Only the naturally occurring indigenous yeasts were used in the fermentation. The wine was then aged 5 months in tank. Prior to bottling a very low dose of sulphites was added. Bottled unfined and unfiltered. Vivid, bright and wild wine.

This Syrah blend with soft black fruits and spice has been shaped by the sunbaked rocky soils of the unmistakable and very definate Faugeres terroir. A herbal, spicy bouquet is followed by youthful red cherries and supple mineral character derived from the schist rich soils. One of our greatest value wines.

Point Triple 2022: is a blend of co-fermented whole bunch Macabeu (schist) and Grenache Blanc (clay) seeing seven days skin macération together. After breeding, a portion of Muscat a Petit Grain (clay-limestone) that sees skin macération and whole bunch fermentation for twenty days, is blended with the other portion one month before bottling. This delightful, wild fermented, textural, insanely bright but savoury maceration wine comes in at a digestible 11% abv. Bottled unfined and unfiltered, with a very low dose of sulphites.

A beautiful, precise Rasteau wine. Grenache, Syrah and Mourvedre woven together to produce a very elegant style. A complex nose of baked plums, blackberry, garrigue herbs and hibiscus flowers. Very fine balance on the mid-weight palate. Simply irresistible and utterly moreish. Bravo!

A very special wine. Winemaker Vincent comes from the Loire Valley so knows about Chenin from there and time making wine in South Africa. Chenin originated in the Languedoc so bringing it back is exciting. The wine is fermented in egg shaped concrete fermenting tanks, which allows better movement of liquid during and after fermentation than in stainless steel. Some barrel ageing too for texture. Well balanced with a purity of fruit enhanced by its roundness and length.. Highly recommended.

This Chenin Noir is aromatic and floral with rosehip and hibiscus leading to sweet, ripe young strawberries. It's richer than the other Lampyres wines, and needs a bit of breathing/decanting time to show it's full wares. Nice tension and with a fresh, gently peppery finsih. Serve cool. Outstanding from the superb talent that is 'FX'.

Absolutlely divine pet nat from Gramiller. So fine, fruity and fresh. Elegant. 95% Clairette Brut, sown with 5% Syrah which gives it aromas of small red fruits and so much more. An outstanding effort.

Guy Vanlanker's best cuvée (and still under £20 - one of the best wines in the Languedoc!) from low yielding Syrah and Grenache vines. 24 months in old oak gives the wine time to shed its tannic cloak. This is a wine of power, elegance and depth, a real Grand Cru of the region.

Westwell's Ortega Rose is fermented in stainless steel tanks at cool temperatures to retain freshness and purity. For this Rose we?ve co-fermented with ripe Regent to add notes of bright red crunchy fruit. It has a nose of wild strawberries and honeysuckle with flavours of redcurrants, bramble fruits and a twist of white pepper on the finish. Delicious on its own or with seafood, chargrilled fish, salads or light pasta dishes. Best served chilled (8-10C).

Fruit! Glorious fruit! Oh my, what a delicious wine made up of Alicante Bouschet 70% and Grenache Noir 30%. The very friendliest Alicante we have ever tasted. Dreamy, sweet blueberry and fresh blackberry fruit that is pleasingly aromatic, juicy, seamless that sits just right on the palate. Perfect for when you want the pleasures of gorgeous fruit with nice depth and presence but with a delightful lightness of touch because of the moderate alcohol (only 12% abv) and pleasingly light, soft tannin. Utterly great on its own or with lighter meat dishes. Wonderful and unique. "Rhonejolais", if you will.

This beautiful Margot 2022 (named after FX's little girl, Margot) is utterly divine modern, natural Roussillon Rose. The make up in this organic wine is 50% old vine Grenache Noir (grown on schist) seeing whole bunch and maceration on skins for 7 days and 50% direct press Carignan Noir (grown on clay). The naturally fermented juices are blended after malolactic fermentation. Tank aged for five months. A very low dose of sulphites at bottling. Bottled unfined and unfiltered. Coming in at a delightful 11.5% alcohol. A beautiful label drawn in school by young Margot also!

A pure fruited, natural wine without additional sulphites. Shimmering fruit backed up by gorgeous savouriness and delightful floral notes - this is a real star for those who like a little restraint and class in their glass (only 13% abv). This is an utterly delicious take on Côtes du Rhône with Syrah leading the way backed up by Carignan and then Grenache. Beautiful balance and real elegance. Vigneron Frederic Julien has some talent!

Wonderful Rose made from a direct pressing of Grenache, Mourvedre and Syrah. Frederic Julien seeks a balance between the aromatic purity of the fruit and freshness. The grapes come from a place named "La Giraude" in Sainte Cécile les Vignes. The soils can be likened to "nourishing" garrigues. The wine shows pink grapefruit, red fruits and flowers, gorgeous texture and perfect weight and freshness. Fine length. Unique and wonderful. Can be drunk on its own or will match well at the table with grilled vegetables, fish and light meat dishes.

Domaine Gramiller's Les Marcels is from a single vineyard (Les Marcels) planted to 85% Grenache (1.9 ha, planed in 1901 and 1960), 15% Mourvèdre (0.3 ha, 2011) from south west facing yellow marl soils on Les Marcels behind Les Girasols. The bunches are 70% destemmed and see a 3-4 week vinification at 25°-26°C. Both varieties are vinified separately. The wine sees small daily pump overs and no press wine added. The wine is then bred in concrete vat for six months. Bottled unfined and filtered. Certified organic. Only 2,000 bottles produced. A wonderful mix of rich ripe fruit that is so pure along with garrigue herbs, spices and fine dark chocolate, but with more freshness than one may expect. The wine still carries good matter and shall age very well, but Gramiller are top tier Rasteau that drink from the off.

Muscat a Petit Grain saw whole bunch maceration for one month in stainless steel vats. The Muscat d'Alexandria saw maceration for one month in clay amphora. after being destemmed. The juices were each pressed to breeding in 5hl barrels and 10hl amphora for 8 months. A wonderful, unique and very interesting wine. The only addition is 2 g/Hl of sulphites at bottling. Production 2000 Bottles. Bottled "with the moon" April 2022.

Deep, juicy, weighty but fresh and textural 100% old vine Clairette fermented and bred in clay amphora with no additional sulphites at any stage. Really pure and elegant - pears, honey and white flowers on this full bodied Southern Rhone white wine. A triumph. A future classic. Bravo Frederic Julien!

Out of the 22 ha that Simon Coulshaw has under vine, 16 are in Faugère and 6 in Pézenas. But, as Coulshaw points out, they are more than 30 km from Pézenas, so while vineyards for the appellation are typically on villafranchian and clay-limestone soils or on black, grey and blue schist, this vineyard is on golden schist. (Coulshaw at this point goes into a charming rhapsody about how beguilingly beautiful schist is...) Le Pech Mege is a single vineyard, the most isolated of all his Pézenas vineyards. Spontaneous fermentation, stainless steel, low sulphite additions, minimal interventions. Coulshaw recommends that this wine is drunk cooler than room temperature. I'd pop it in the fridge for 10–15 minutes to get it down to around 16 °C/61 °F. “It's rare that a Languedoc wine (or any wine, to be frank) can pull off the tightrope balance of pert, outright cheeky freshness and straightforward fruit whilst being pretty dense and concentrated at the same time. This wine defies the laws of gravity. At its heart, there is a deep tobacco-leaf wrapped, chocolate-streaked, umeboshi-plum and soy-umami savouriness, notes of reduced beef stock and game glimmering in the gloaming. But radiating out towards the edges of the wine is this confident, gregarious, sap-filled mulberry fruit and puppy-playful acidity that seems to roll around with gleeful abandon. Supple, lightly astringent but fully ripe tannins. A wine of the vineyard, of the vintage; a wine that shines with a sense of who and what it is”. Simon Coulshaw makes natural wines: no cultured yeast, enzymes, chemical tannins or fining product and farming with respect to the environment, although the domaine isn't certified organic. A funky red/white grape blend from the frost effected 2021 harvest. A much lower white crop than normal and a far fresher red one, led to this one-off cuvee from Roussanne, Grenache, Viognier and Syrah. It's fragrant, it's juicy, it's fun. It's has no adds whatsoever, not even any sulphites at bottling.
