Famously delicate and sexy pink At the March 2022 Taste Champagne (300 wines) I have to say this stood out as one of the most delicious "drinking Champagnes" on show - and there were some very Showy wines on show that day. A huge success for us, easy to forget just how gorgeous it is - firstly it is so very savoury, forget the cherry fruits, it's more like Xmas cake, rhubarb, forest floor, nettle and nutmeg. When the glass is empty the aromas persist. This is Grand stuff, the stuff of deluxe cuvee, truly epic. And a dinner wine too. A cunning counsel for you - don't serve it too cold, err on the cellar-temperature side. March 2022. Of course the whole Billecart range is exceptional and impressive but the 'basic NV is a STEAL! Seriously, super-tight with Silex and citrus, grippy and bracing. On best-ever form.

Fairly simple cherry and redcurrant aromas lead to blackcurrants and plums in the mouth, with refreshing acidity and a line of bitterness on the back palate. The grapes were whole-bunch pressed, which perhaps adds that greeness underneath the ripe fruit. A more structured, tannic wine than initially expected, but with lovely fruit - delicious wine.

A Grande Champagne Cognac blended from well-aged eaux-de-vie, this enjoys a two year marriage. It is "pale" for it has a light hue, despite its age, and is "dry" for it has no added sweetener. The nose is full and thick with floral notes, a little oak and vanilla spice with a touch of rancio, some leather. The palate is supple and rounded with plenty of fruit. Amazing fruit, grown in the Leyda region 5km from the ocean, so close you can smell it, crafted into a unique expression of the enigmatic Pinot Noir that clearly demonstrates the real quality that lives in this land. Viticulture A single vineyard Pinot Noir from one of the most coastal vineyards in Chile in San Antonioi just 5 km from the ocean, within a small vineyard region 55 miles west of central Santiago and just south of Casablanca Valley. Morning mists and spring frosts, often associated with the Napa Valley and Bordeaux are brought from the west coast by the Humboldt current. Winemaking Grapes are carefully selected and picked manually early in the morning . Cold maceration prior to alcoholic fermentation at 10C during 3- 4 days in order increase skin components extraction. Alcoholic fermentation was carried out at low controlled temperature ( Maximum 25C), which avoids the loss of volatile compounds (aromatic compounds). Regular pumping over to facilitate colour extraction and skin components. Aging in tank with oak to add complexity and oaky character to final wines. The wines of Quinta do Panascal are rich, with voluptuous fruitiness, mouth filling density and a velvety texture. A fat, plump, luscious wine. Full of rounded, ripe jammy fruit aromas.
