Vina Marty is proud to present this Sauvignon Blanc, a unique wine in the world in its style, fermented using Japanese sake yeast n°7. Only members of the sake producer association are allowed to use these yeasts. We are then honoured to be the only non-Japanese member. These yeasts are a true treasure of Japanese culture and allow us to vinify at much lower temperatures than regular wine yeast, which has always been a dream for winemakers. This Sauvignon Blanc presents a very new and unique profile, mixing the wonderful terroir of Chile, techniques of French vilification, and the millenary tradition of Japan. Nose : Complex with a beautiful intensity of citrus fruits and white flowers, such as orange blossom. Notes of Green spices with bakery and vanilla flavours. Palate : A floral sauvignon blanc with criticus aromas. A hint of chilli pepper add originality to its character. Its soft, dry, with medium acidity round and well balanced. Elegant thanks to a workon lees, we can enjoy a long and creamy finish.

Grapes are closely monitored when reaching maturity in order to find the optimal balance between phenolic ripenes and acidity. After careful sorting and desteming, grapes are placed in stainless steel tanks for fermentation. Regular pump-over ensure a gentle extraction of the tannins. After malolactic fermentation, 50% of the wine is transfered into French oak barrels for a period of 12 months. TASTING NOTES Intense ruby-red colour with glints of garnet. Initially the nose presents scents of fresh strawberry, red cherry, gooseberry and blue flowers. Then subtle notes of bay, tobacco, caramel and graphite emerge. On the palate, the wine is generous with soft yet lively tannins, leading into a long, lingering finish.

Viticulture A single vineyard Pinot Noir from one of the most coastal vineyards in Chile in San Antonioi just 5 km from the ocean, within a small vineyard region 55 miles west of central Santiago and just south of Casablanca Valley. Morning mists and spring frosts, often associated with the Napa Valley and Bordeaux are brought from the west coast by the Humboldt current. Winemaking Grapes are carefully selected and picked manually early in the morning . Cold maceration prior to alcoholic fermentation at 10C during 3- 4 days in order increase skin components extraction. Alcoholic fermentation was carried out at low controlled temperature ( Maximum 25C), which avoids the loss of volatile compounds (aromatic compounds). Regular pumping over to facilitate colour extraction and skin components. Aging in tank with oak to add complexity and oaky character to final wines. The sake yeast no7 is also at the basis of this creation. In contrast to the Sauvignon blanc, the sake culture is less easy to discover here ,. This is because the tannic structure of red wine predominates over the aromatic characteristics of this yeast culture. Some bottle aging will change this. But will this wine have a chance? The quality is already excellent. Lots of cherry and small red fruit in the smell and taste, with a refined and elegant aftertaste. No burgundy style, but classic and at a lonely height!

The vineyards and winery are located at the confluence of two historic rivers, which brought down sediments from the Andes that established the vineyard's alluvial soils. The same river canyons channel cool breezes from the Pacific Ocean, contributing to the wine's rich fruit character. The nose is very harmonious and the varieties feel very integrated; the Carménère does not dominate the aromas and is nicely blended with the others. There is an extra spark of freshness here along with more restraint and seriousness. A red blend of finesse.

Errazuriz
Errazuriz is one of the most famous Chilean wineries, founded in 1870 and consistently one of the world's most admired wine brands. They make the icon wine Sena, which beat Ch Lafite and Ch Mouton Rothschild in the Berlin Tasting to be named the finest Cabernet Sauvignon in the world. The grapes for the Winemaker's Selection Sauvignon Blanc come from selected vineyards that grow close to the Pacific Oceans coast in the Aconcagua Region, on rolling hills at an altitude of 100 to 300 meters above sea level. Gentle Pacific breezes and morning fog make these vineyards ideal for producing refreshing Sauvignon Blanc. Grapes were picked by hand and taken to the winery, where they were carefully destemmed, crushed and pressed. The must was lightly clarified and fermented in stainless steel tanks. After fermentation the wine was kept on their lees for three months to intensify its distinctive fruit character and develop a nice texture. The nose displays citrus aromas of lime and tangerine. The palate features flavours of mandarin, tropical fruits and herbal notes. A wine with refreshing acidity, great depth and persistence.
