This vibrant Pinot Noir embodies its cool-climate roots with enticing aromas of wild strawberry, Bing cherry and plum, as well as subtle undertones of dried herb, forest floor, sweet vanilla and baking spices. On the palate, the lush red berry flavours are framed by smooth, refined tannins and a silky texture, with a tantalizing hint of bright acidity lingering on the long, focused finish.
2021 Fundamental White Blend by Joey Tensley (92 points, Jeb Dunnuck)
As with past vintages, this bright, aromatic wine is made up of a blend of white Rhône varietals. We based this wine primarily in Viognier then blended it with Grenache Blanc, Roussanne, and Marsanne to add complexity, acidity and freshness. A portion of the wine was aged in neutral French oak barrels while the rest aged in a stainless steel tank. Look for citrus and banana on the nose and palate, along with a rounded mouthfeel and crisp, fresh finish. Drink this wine now or age it over the next 2 to 5 years.

The majority of the blend is Syrah but still has large amounts of Grenache, Mourvedre and a little white wine in to lift the nose. Savory and fruity is hard to accomplish but this wine delivers both. A refreshing, dry white with citrus lemon/lime notes, flinty minerality, and crisp finish. In the mouth the wine is rich and textural, from the time spent on lees in the barrel. This is a great match with shellfish of any kind, or richer white meats such as turkey or duck.
Au Bon Climats Hildegard is a recreation of the original varietal planting of the Corton Charlemagne vineyard in 800 A.D. Chardonnay was not part of the mix at the time, but rather Pinot Gris, Pinot Blanc and Aligoté.
The combination of this unique blend with long term barrel aging (2 years) made something special. It has a texture, complexity, and distinctiveness that cannot be found in a single white wine varietal.

Aromas of ripe stone fruit, contrast nicely with fresh herbal scent as the wine is initially evaluated.

Santa Barbara County Chardonnay is a beautiful example of the Au Bon Climat style. The flinty, stony aromas stand out while in the background is a hard spice note from sur lie barrel aging. There are notes of lemon-lime and soft vanilla.
Strawberries and blackberries aromas slowly rise out of the glass. Overtime, more of the anise and clove will mix with these other aromas. Currently, the wine is young with mouth filling intensity and suppleness. Complexity will increase as the wine ages, but this wine should stay fresh for 6 or 7 years.
In its youth, match this wine with lamb or dried meats. After a few years, as the flavors coalesce, it will pair better with salmon or mild red sauce with pasta.
Made by all female star team of owner Lindsay Hoopes, Anne Vauter (ex Screaming Eagle) and Jennifer Rue this has richness and elegance in equal measure. Extended barrel ageing has softened the wine, as has some bottle age, making it exquisite to drink now. It will keep but why wait?
