Umami is a spirit in a class of its own, designed for dry and savoury cocktails. Hand-picked Italian capers are distilled at low temperature, then blended with a parmesan extract and two other ingredients before being left to rest in an ex-cognac barrel.
Essentially a Gin without the Juniper! Distilled using 14 aromatic botanicals, including caraway, cardamom, nutmeg and citrus. Lightly sweetened with raisins, vanilla and a small amount of sugar.
Nose: a very intense one Scent that begins with aromas of coffee, vanilla and caramel and is followed by peaches, orange peel, bananas, cooked pears, walnuts and cocoa
Palate: on the palate oily and tangy at the same time , with notes of quince, citrus peel and coconut - towards the end there are also cinnamon and balsamic notes
Finish: a very long finish with smoky molasses, cocoa, almonds, cherries, apples and cloves
A peculiarly sophisticated gin distilled in Scotland with the essence of Bulgarian rose petals and cucumber. Delightfully fragrant with juniper notes more delicate than most. Best served with a slice of cucumber.
Nose: Coastal peat smoke, vanilla and tangy and bright
citrus zest.
Palate: Maritime peat, ripe orchard fruit, warm oak and a
gentle, warm black pepper spice.
Finish: Lingering peat with a subtle seaweed salinity.
Distilled and filled into bourbon casks and then finished in calvados casks for two years. Being aged for two years in casks that previously held French cider has given this soft and honeyed single malt a certain certain magic has added a crunch, almost like an apple. Fresh crispness and sweetness of green apples together with candied fruit and citrus zest.

Palate: Tarry rope, bung cloth, smoky bacon, old tractor shed, peanut brittle, sticky spare-ribs.
Finish: Crashing waves, sea-salt, bothy fireplace and cigar shop.

The cellar master, Alexander Gabriel, has the the great pleasure to open for the very first time his private collection of exceptional cognacs. Premier Cru single cask 100% Grande Champagne, unique in the world! These preciously guarded treasures rest under the vaults of the Chais Paradis, in the underground passages of Mademoiselle's 19th-centuary manor. These forever inimitable vintages, from the oldest to the most recent, are made from Ugni Blanc, Folle Blanche, and Colombard grapes. Although it is impossible to reproduce them, they all have one thing in common: each of them bears witness to the extraordinary character of Grande Champagne and to the savoir-faire of the Cognac region perfected over the centuries. These extraordinary cognacs are not blended and are bottled at their natural alcohol content right out of the barrel, without filtration.
Nose
Rich, woody and spicy on cloves, cinnamon and pepper with tar and smoky molasses with roasted chestnut,
berries and thyme honey.
Palate
Round and fruitier on orange, peach and plum with maple syrup and leather.
A Blended Scotch Whisky from Adelphi, perhaps better known as an independent bottler. However, this blend of grain and malt whisky is from its private stock which is kept in a solera system. Though excactly where the whisky hails from is kept rather hush hush, we suspect it contains spirit from all over the shop, from Islay, Speyside and Campbeltown.
Canerock is a fantastic drink created by the team at Maison Ferrand, using aged Jamaican rums at its core, including a generous helping of high-ester rums. Alongside these rums, the team infuses the likes of Madagascan vanilla pod, Jamaican ginger, and Caribbean coconut into the spirit, and a portion is given some extra time in Pedro Ximénez sherry casks to allow its flavour profile to develop further. An impressive expression indeed, more than suitable for sipping neat, but will also be excellent for upgrading your rum cocktails.
Aromatic green coffee beans are sourced, roasted and cold-pressed in the distillery, and added to a base of F&S organic gin, complimenting its key botanicals of Juniper, Angelica and Coriander.

For this captivating place has soft white sands that sing beneath your feet, a hum that ebbs and flows with the winds and the tides. But beguiling as this place is, do not drop your guard. Bathing is ill-advised in the seemingly tame crystal waters where jagged, volcanic rocks pierce the sands along the shore.
Exceptionally rare, this small batch 19 year old Ardbeg displays notes of HERBAL PINE, bracing MINT CHOCOLATE and CITRUSY LEMON on the nose. A rich smokiness gives way to PEANUT BRITTLE and SMOKED CURRANTS, with waves of ANISEED, HAZELNUT, and PEPPER. A satisfyingly long finish brings with it notes of VANILLA FUDGE and CLOVE.

Named for the year it was casked, Angostura 1919® is a light golden rum aged in charred, used bourbon oak casks and distilled in Angostura’s multi-column continuous still. It was produced using the unique blending techniques developed by the Fernandes family in the 1800’s, the same blend which was salvaged from charred casks from the fire in 1932.

Inspired by the flavours of historical rums, the 2022 Black Tot Master Blender's Reserve is made with a blend of rums from Barbados, Jamaica, Trinidad and Guyana, as well as Black Tot's Perpetual Reserve rum. Aromas of melted chocolate, toasted hazelnuts, orange, cinnamon sticks, pineapple juice, blackcurrant and raspberry leaf fill the nose, complemented by notes of milk chocolate-covered raisins, café latte, ripe banana, aniseed, crème caramel with demerara sugar, nutmeg and cinnamon throughout the palate.
