Clonakilty Distillery
Inspired by the Minke Whale, the majestic creatures that swim wild off our Atlantic Ocean coastline. The same local coastline is home to the unique botanical that gives Minke Gin its distinct flavour profile. Foraged by Hand We climb the cliffs along our shoreline to sustainably harvest native Rock Samphire, only by hand and only in season. It’s really worth the effort! Amongst our Rock Samphire, we use other botanicals such as lavendar, citrus fruits, cardamom and lemon verbena. Minke Spirit The base spirit used to make Minke Gin is derived from whey, produced from our 8th generation family farm near Galley Head Lighthouse (and other West Cork farms). This gives a unique velvety texture and mouthfeel to each delicious drop. For Minke Gin we go full circle, grass to glass, harvesting nature at its best.

Singularity is an organic vodka tuned to deliver a clean flavour and silky mouthfeel. In this simplest of mixtures, there is still room to select the best alcohol and water, as well as a mixing and filtering process which softens the palate. We studied how alcohol and water interact at a molecular level. Carefully-selected organic alcohol is blended with a unique mineral water using an exacting method to produce Singularity. We’re proud to have been awarded “Vodka of the Year 2021” by the prestigious Chinese Wine and Spirits Awards (CWSA). Is it the smoothest vodka known to science? We think so. It was created using botanicals that were foraged locally in the spring and summer of 2021 in a bid to capture the essence of the shifting English seasons. Billed as a “collector’s item” The gin was distilled using the company’s novo-dimensional distillation system, in which nine variables including temperature, pressure and time can be adjusted for the distillation of each botanical. These separate distillates are then blended together to create the final spirit. With botanicals include lemon balm, hawthorn blossom, nettles and cow parsley flowers, Cambridge Distillery says the gin is elegant with citrus and herbaceous notes. It recommends serving chilled, over ice, or in an extra-dry martini.

Anty gin, which is literally made with ants as a botanical, started as an idea from the Nordic Food Lab - an organisation run by Noma's Rene Redzepi and gastro-preneur Claus Meyer - and was brought to life by the Cambridge Distillery. This Anglo-Danish vegan nightmare contains the essence of precisely 62 ants, which add a citrus flavour to the gin and are used instead of the more traditional orange or lemon peel. Although Anty gin is, perhaps unsurprisingly, the world's first gin made from ants, it is not the first time that ants have ever been distilled – centuries ago they were distilled to create formic acid, which is useful as a preservative and antibacterial agent.

A mellow, aromatic dry gin from Booth's that has been aged in casks that previously held Pedro Ximenez sherry. The palate offers notes of rosemary, grapefruit, camphor, lemon, chamomile and soft oak spice that linger in the finish. Booth's was originally established in 1740 by the eponymous family who founded the first distillery in London. Their distinctively golden gin - instantly recognisable thanks to the octagonal bottles it was presented in - was discontinued in the 1970s, an event much lamented by gin connoisseurs.
