This outstanding, estate-grown Chardonnay comes from a massive outcrop of limestone at the base of the iconic La Roche de Vergisson. Fermented in stainless steel and aged in neutral French oak demi-muids, this is the classic style of Macon with an unctuous and creamy texture, but displaying the wonderful only-in-Burgundy kind of mineral-driven acidity that keeps it extremely refreshing and adds a touch of class to proceedings. Notes of toasted hazelnut, almond, yellow apple, pear, jasmine and honeysuckle are prominent, while beautiful stony mineral notes shine in the finish. The finish, by the way, is notable for its extreme persistence and is the cherry on top of a truly outstanding white Burgundy, the kind of value every lover of these kinds of wine craves.

South Africas celebrated Gottfried Mocke made legendary chardonnay in his time at Cape Chamoix. He now makes this wine at the famous Boekenhoutskloof estate using superb-quality fruit sourced from near neighbours. The result is a classic example of cool-climate chardonnay, refined and with an uplifting saline note while still maintaining a generous texture on the palate. Cap Maritime sits perched on top of a ridge separating the Upper Hemel-en-Aarde appellation from the Valley, one of the most exciting places to grow Chardonnay and Pinot Noir in South Africa. The wine shows layers of green apple and citrus fruits. Judicious use of French oak seamlessly brings together aromas and palate with a gentle spice that makes this an utterly moreish Chardonnay.

Pascal Fournillon is a sweet-natured man, always happy when people find him in the sleepy hamlet of Bernouil, some 10 miles north-east of Chablis town. His mum also makes the best gougeres if you need further incentive. Pascal's vineyards cover some 23 hectares of land in the appellations of Chablis, Chablis 1er Cru and Epineuil. He is bottling more and more of his own wine rather than selling in bulk and this means we have access to good allocations of Chablis that Pascal is happy to age for us for a few years till it is perfect to drink. This Bourgogne Chardonnay is from vineyards near Chablis and bears all the hallmarks of it; steely, lemony, fine and elegant.

One of the top handful of Chablis growers with a deeply individual style. Long lees ageing - 18 months or so, late-picked but not botrytised fruit, reserved oak influence using mostly used 600-litre Demi muids. The results are a nod to Côte d'Or grandeur but distinctly Chablis, maybe Chablis x1.5 - these are seriously, excitingly concentrated wines. Les Héritiers du Comte Lafon
Domaine des Comtes Lafon has the deepest and coldest cellars in Burgundy and they nurture some of the greatest dry white wines of Burgundy. Dominique Lafon has been in charge since 1985, taking over a domaine which already had a reputation for outstanding, if irregular whites, and potentially good reds. When Lafon took over the domaine, most of his vineyards were leased out on a share-cropping basis. It was only towards the end of the 80s that he managed to reclaim all the vineyards and thus have full responsibility for them.The white wines are now consistently among the best in Burgundy while since 1989 the reds have reached the top division. The domaine is now cultivated according to biodynamic principles with no use of herbicides or chemical sprays. All the wines are barrel-fermented, using new oak for the 1er Crus upwards. This is the very pinnacle of White Burgundy with superlative fruit, power, complexity and total harmony being the wines' hallmarks. In September 1999 the Lafons bought a domaine in the Maconnais at Milly Lamartine, sold under the label of Les Héritiers du Comte Lafon. Further vineyards have been bought subsequently, and from 2009 there is a contract in place to farm the vineyards of the Chateau de Viré. This wasnt produced in 2019 due to frost; the surviving grapes were declassified to Mâcon-Villages. There was no lasting damage, and its a real success in 20. This spot ripens early, so the grapes are picked at the start of harvest. Made in oak foudre, this is fruity and charming with crisp peach fruit and a zesty finish.

Berene Sauls has a very unique story. Growing up in a small village in the Overberg, Berene admits that she came from a beer-drinking community, and wine was never really on her radar. Her first exposure was at the age of 19, when she began working for the trailblazing Hamilton Russell family as an au pair. Lasting only a month, her talents at childcare aside, Anthony Hamilton Russell recognised her drive and thought a job working in the winery office would better suit her. Thrown in at the deep end knowing really nothing about wine, she was soon exposed to every side of the business - assisting with exports, bottling and labelling, driving forklifts and picking during harvest too, as well as on the side, "growing and developing a palate that wasn't there!" Her curiosity kept her rising through the ranks, and fifteen years after starting her career, Anthony offered her the opportunity to make her first wine, aided by proficient head winemaker Emul Ross. She leapt at the opportunity, and the rest is history. She named her business Tesselaarsdal for the small village that she grew up in, and if you look closely at the label, you can make out two people walking across the mountain. This is Berene and her grandmother. From unirrigated vineyards on the Hemel-en-Aarde Ridge, and this is just her third release! Crisp acidity and lean minerality underpin notes of melon and tangerine fruit and accents of lime blossom. A triumphant expression of terroir, this medium-bodied, cool climate wine is both silky and fresh and boasts a long, elegant finish.

Domaine Belleville
Domaine Belleville was created in Rully by the Dumont family at the beginning of the 20th century, and now has 28 hectares spread out from North to South Burgundy. Impressive winery equipment ensures only the best grapes are selected for vinification and the wines are pure and precise. The estate was purchased by two Americans (one an academic at Harvard, one in finance), and already changes are being made including a refresh of the packaging. Young winemaker Charles is highly enthusiastic about the new direction of the estate. With a terroir, plot focused portfolio, Belleville is creating wines of great concentration at great prices.Charles asserts that the move to organic practice has resulted in higher natural acidity in the wines. Site selection was vital as he ventured off the grid to plant on the site of an old limekiln in the Gavilan Mountains of California. Today Calera wines still express that pioneer spirit and are revered the world over.

Domaine de la Croix Senaillet
Saint Veran Domaine de la Croix Senaillet is a truly magnificent example of Maconnais Chardonnay from one of the areas leading producers. It is a fleshy wine with vibrant lemon notes, apple and floral aromas all would round a fresh mineral finish. Its posh enough for special occasions but affordable enough for Wednesday nights. Since the early 1990s, brothers Richard and Stéphane Martin have been farming this Domaine along strict organic principals. They have grown their holdings from 6 to 25 hectares in that time with the majority in the Davaye commune. Their wines offer tremendous value from a region that is seeing prices escalate. Their attention to detail and quality is quite something to behold and really shines through in their wines.

Meo Camuzet
Jean-Nicolas created this vineyard in 1989 from poor, stony ground atop the hill, behind the trees above Echezeaux. Around 5-10% is planted to Pinot Blanc; as the Chardonnay is particularly low yielding, the proportion in the wine is a little higher. Theres surprising weight and power, but it retains the fine, tight lines of freshness one expects.

J.C. Bessin
This is from just over 1.5 hectares planted in the late 1960s and early 70s. Bessins Forêt vines arent far from his Montmains but the wine displays a very different character. Theres some smoky reduction on the nose, with restrained salinity and some delicate citrus fruits underneath. Intense and pure, this is a picture of restraint.
