Fermented in tank at 17–19 °C and aged 4 months on lees. TA 5 g/l, pH 3.33, RS 2.18 g/l. Intense aroma of bayleaf and rosemary, dramatically herbal without being green or unripe. The small percentage that had skin contact has given this a brilliantly judged texture, just a very slight grip, so it is not just about the aromatics. Moderate acidity, but freshened by that grip and the low pH. Wonderfully aromatic and so true to the variety, without being a caricature. (Julia Harding). 16.5 points

Deep and wonderful. On the palate the wine is elegant and deep again, but not heavy in the slightest. Ruffled fruit and savoury notes with minerality and real finesse. Chateau Les Pins de Bossuet
HISTORY The Dubost Family’s estates were created in 1957 by Paquerette and Yvon Dubost. He was the former mayor of Pomerol, so he knows its history as no one else does. His vineyards have a rich and complete range of wines. Nowadays, his son Laurent, graduated from agricultural school, runs the estate. Thanks to him and his team's hard work, he placed the wines from the Dubost estates at the fore of their appellations: Château Lafleur du Roy in Pomerol, Château les Pins de Bossuet a Bordeaux Supérieur, Château La Vallière in Lalande-de-Pomerol. Château les Pins de Bossuet was created and planted by Yvon and Pâquerette DUBOST in 1975, on exceptional parcels close to the appellations Lalande de Pomerol and Montagne Saint-Emilion. The 9 hectares are located at 70 meters of altitude, with a south west exposure, it benefits from the oceanic climate. The unique and exceptional terroir is exclusively made from gravels. The vineyard is 30 years old on average, planted with 60% Merlot, 20% Cabernet Sauvignon and 20% Cabernet Franc. No chemical herbicides are used in the vineyard as it is regularly tilled. Finally, in order to keep the wine quality, harvests are completely made by hand with total destemming of the bunches. The wine is rich, harmonious with nice red fruits, undergrowth and spices aromas with an excellent ageing. The color is dense with a rich bouquet of red and black fruits. The mouth is fleshy and round, with gorgeous and charming tannins and allows us to enjoy it young. Nice substance and structure for a great ageing.

Its brand new label is inspired by the ancient Romanic abbey, La Badiola, which was built in 998 B.C. and overlooks the vineyards of one of the most picturesque hills of Chianti Classico. The addition of Petit Verdot to the blend (65% Sangiovese, 30% Merlot, 5% Petit Verdot ) adds an appetising spiciness and enhances its longevity. The wine spent 10 months in Tonneaux barrels (500 L) allowing the production of a fresher, more modernstyle while the introduction of the natural cork enables further ageing and elevates its quality level. Elegant, fresh red berry flavours, velvety, aromatic and supple.

Domaine Fournillon
Pascal Fournillon is a sweet-natured man, always happy when people find him in the sleepy hamlet of Bernouil, some 10 miles north-east of Chablis town. His mum also makes the best gougeres if you need further incentive. Pascal's vineyards cover some 23 hectares of land in the appellations of Chablis, Chablis 1er Cru and Epineuil. He is bottling more and more of his own wine rather than selling in bulk and this means we have access to good allocations of Chablis that Pascal is happy to age for us for a few years till it is perfect to drink. This Bourgogne Chardonnay is from vineyards near Chablis and bears all the hallmarks of it; steely, lemony, fine and elegant.
