Theres a cool stoniness, like mossy concrete; an almost imperceptible peppery nuttiness; and then the wine momentarily widens into sweet pear before narrowing into a piercing finish. Louis Roederer
The bouquet is open and rich yet also wonderfully fresh. It offers an explosion of ripe, delicate fruit with intense notes of mirabelle plum from the Pinot noir, complemented by sweet lemon meringue pie and delicate notes of jasmine from the Chardonnay. The nose opens up to reveal autolytic characters and evolves towards smoky, roasted notes and freshly baked pastries. The palate is deep and dense with a big, well-structured backbone. The texture is simply mesmerising with its fleshy mouthfeel from the Pinot noir that coats the palate before giving way to an incredible saline freshness with a pleasant hint of bitterness. This wine combines the strength, intensity and power of the delectably ripe Pinot noirs which are balanced to perfection by the chalky freshness and density from the Chardonnay which forms the majority of the blend. Collection has all its warmth and generosity thanks to the perfect ripeness of the fruit harvested in the 2018 vintage, yet it is the freshness, energy and complexity of the Réserve Perpétuelle created in 2012, as well as the texture imparted by the oak ageing, that extend and elongate the wines body resulting in unrivalled finesse and persistence.

Lyme Bay Winery
The Classic Cuvee is a blend from the noble Champagne varieties Pinot Noir (81%) and Chardonnay (19%). The grapes were carefully hand-picked and whole-cluster pressed, with only the best cuttings going into the wine. After a slow, cold, natural settle, the juice was inoculated for primary fermentation, with a portion of the jiuce going into barrel to add complexity and mouthfeel. The wine was bottled for secondary fermentation the following spring and remained on-lees for a minimum of 24 months to develop the secondary yeast flavours, before being disgorged and given time under cork before release. The Classic Cuvée is an elegant sparkling wine, showing a depth of citrus and stone fruits flavours, along with the more complex secondary aromas of cooked apples, breadcrumbs, honey and almond.

Initial fermentation takes place in thermo-regulated stainless steel vats. After assemblage a second fermentaion takes place in bottle. The wines are 'forgotten' in the cellars for 5 years. Then this Grande Cuvée is finally revealed - showing incredible freshness and great delicacy. The wine is dosed at only 5g/l. Coming in at 12% alc. The wine is rich and complex with a beautiful golden colour with fine and very delicate bubbles. Rich caramel tones interwoven with crystalised fruit with fine vanilla and a whiff of gingerbread on the nose. The palate is delightfully youthful with accompanying citrus notes with orange oil and zest. A remarkable and truly special Cremant de Limoux. A special sparkling wine.

This is possibly Flint Vineyards pinkest and fruitiest Charmat Rosé to date, and, for the first time, the blend includes a portion of Pinot Noir and Bacchus. The 2021 is bursting with confected strawberries and cream. But its not just all fruit: there is a slight praline nuttiness in the background, which gives the wine some complexity. On the palate it is crisp and bursting with red fruits. Very drinkable as an aperitif and perfect for celebrations. A really lovely British drop playing the Italians at their own game.
