Champagne and Sparkling

This is possibly Flint Vineyard’s pinkest and fruitiest Charmat Rosé to date, and, for the first time, the blend includes a portion of Pinot Noir and Bacchus. This release is bursting with confected strawberries and cream. But it’s not just all fruit, there is a slight praline nuttiness in the background, which gives the wine some complexity. On the palate it is crisp and bursting with red fruits. Very drinkable as an aperitif and perfect for celebrations. A really lovely British drop playing the Italians at their own game. Delightful pet nat from Gramiller. So fine, fruity, fresh and elegant. 50% Clairette and 50% Ugni Blanc. Pear, white flowers and cut grass on the nose. The palate unfolds with these flavours whilst being juicy but oh-so fresh and very fine and elegant Pet Nat. An outstanding effort.

54% Pinot Noir, 46% Chardonnay 3g sugar Dosage Expressive notes of white peach, honeysuckle and quince on the nose, followed by some brioche and exotic fruits. On the palate the champagne is full and quite open, beautifully balanced and with real richness, with touches of ginger and apricot jam.

An elegant, refined dry sparkler from the Languedoc, where the first sparkling wines were made in 1531. Chardonnay and chenin dominate the blend, and there is a lovely stream of bubbles to seduce and enliven the palate.

This 2015 is a fantastic vintage, with its equal blend of Chardonnay and Pinot Noir. The nose is delicate, subtle, powdered with pastry tones. On the palate, the attack is somewhat lively, with beautiful bitter notes that gradually melt. Serve as an aperitif or with poultry and game.

M 3.0 Le Mauzac is a traditional method sparkling wine with no added sugar at any of the 3 stages of production. The only thing fermented and added (twice more) is organic Mauzac juice. This cuvée is without doubt the finest representation of Limoux's indigenous grape variety. First planted by the Romans, it is particularly well adapted to the climate and requires much less water than Chardonnay. This pure Mauzac has been aged for 36 months in bottle, then disgorged. It is a particularly impressive and very elegant take with fine, persistent bubbles. A real 'wow' that you NEED to know about. Bright, fresh and fruit-driven, made with a blend of sustainably grown, aromatic varieties including Pinot Noir, Chardnnay and Pinot Blanc, that require minimal intervention in the vineyard. The grapes were pressed under nitrogen to retain their delicate flavours, with a proportion fermented in neutral oak to add complexity. Secondary fermentation was completed in tank, making it one of the first of its kind produced in England.

The bouquet is open and rich yet also wonderfully fresh. It offers an explosion of ripe, delicate fruit with intense notes of mirabelle plum from the Pinot noir, complemented by sweet lemon meringue pie and delicate notes of jasmine from the Chardonnay. This wine combines the strength, intensity and power of the delectably ripe Pinot Noirs which are balanced to perfection by the chalky freshness and density from the Chardonnay which forms the majority of the blend. This 244th blend from the Louis Roederer Champagne House is based on the finest successes of the 2019 harvest, a year of record-breaking temperatures brought by particularly intense heat waves. Dry and continental and of magnificent maturity, this year gave us wines that were dense and fresh, with a masterful balance, conducive to bringing out the powerful and luscious Collection character in the blend.

Pale gold in colour with a fine, persistent mousse. The nose reveals inviting aromas of toasted brioche, pistachio and honey, lifted by the freshness of green apple. Dosage adds a rich, creamy texture with great length but without being heavy. The freshness of the wine supports this length bringing a well-balanced and highly persistent wine. Carte Blanche reflects the traditional style of the fine wines from Champagne of the 19th century. It is a soft and creamy champagne, releasing a pure fruit that gives it a lovely vibrant character. A legendary vintage champagne with wonderful finesse and precision Champagne Salon is the creation of a man who loved champagne: Aimé Salon. Fascinated by the Mesnil terroir, this daring man created the champagne of his dreams, a Blanc de Blancs that is quite simply exceptional. "The champagne of one man, Aimé Salon, of one terroir, the Côte des Blancs, of one cru, Le Mesnil-sur-Oger, of one grape variety, Chardonnay, of one year, that of a great vintage." In the words of the House, we understand that the story of this champagne has all the makings of an adventure novel. And with good reason: Champagne Salon came to life in 1905, but it wasn't until 1920 that this audacious character revealed his sublime and mysterious creation to the rest of the world. Today, Maison Salon has joined the Laurent-Perrier group and now shares its ambitions and resources with Maison Delamotte, both managed by Didier Depond. Only produced in the best years, this Blanc de Blancs Champagne is as confidential as it is exceptional. Demanding and precise, the wines are kept in the cellar for an average of ten years before revealing all their grandeur. Despite a cold winter and spring, the vines did not suffer any frosts in 2013. The budburst took place at the end of April under abundant rainfall, which lasted until full flowering at the beginning of July. Despite a hot summer, sporadic thunderstorms and slow ripening of the grapes in October, hail damage was minimal. Despite the bad weather, the 2013 harvest was excellent, at 13,000 kg/ha, with the Chardonnays standing out for their balance and acidity. This champagne comes from the one-hectare plot known as "Le Jardin Salon," and nineteen other small plots in Mesnil-sur-Oger, carefully selected by Aimé Salon at the beginning of the 20th century.

Billecart-Salmon's exceptional prestige cuvée was created in 1964 as a tribute to the House’s co-founder Nicolas-François Billecart who married Elisabeth Salmon in 1818. The 17% maturation in 15 year-old traditional oak barrels underpins the generous character of this fine, elegant and rich champagne. The 2012 weather has been hallmarked by many as very challenging but has created some stunning Champagne. Relatively low yields due to various weather conditions throughout the year. The winter months brought some frosts and hail which damaged the early stages of bud burst. August and September were very warm and this helped rescue and give the grapes a stunning maturity. "The 2012 Brut Cuvée Nicolas François Billecart shows all the natural radiance of the year. There's gorgeous resonance and texture here. Apricot, spice, tangerine oil and lightly honeyed notes infuse the palate with notable depth and persistence. This rich, expansive Champage has a ton to offer.
