This cuvée was named in tribute to Louis, Elisabeth Salmon’s brother, who was passionate about oenology and highly involved in winemaking from the earliest creation of the House. Originating from the best parcels of the Côte des Blancs, the Blanc de Blancs vintage is endowed with purity and minerality. Distinguished elegance of a mineral and exceptionally precise Chardonnay with a natural balance that is a harmonious representation of the best parcels of grand crus of Côte des Blancs: Cramant, Chouilly for the finesse, Avize for the force of character and Mesnil-sur-Oger for the structure and longevity. A creamy sensation in the mouth with a beautifully chiselled finesse. Lovely refreshing balance with natural flavours (zest of citron, almond biscuit and white pepper). This powerful wine with a majestic typicity prolongs its finish towards an aromatic persistence of incredible length (flesh of sweet citrus fruits, cardamom and vanilla-flavoured cream puffs). The unique dimension of a great Blanc de Blancs, pure and intense, with a directness perfectly associated with its low dosage. Its potential and its balance express a remarkable finesse worthy of the most sophisticated food pairings (a casserole of whole calf sweetbread from Corrèze, a creamy shellfish risotto).

The 2013 ‘Brut Millésimé’ blends 57% Pinot Noir and 43% Chardonnay, sourced from 10 Grand and Premier Cru vineyards. Following a freezing winter and spring, the short-lived summer heat waves of 2013 led to a phenolic maturity that, although late, was much higher than average. The autumn-like conditions at the end of the maturation process postponed harvest until mid-September, creating an expression that stands out for its elegance, freshness, and complexity.

Black forest fruits, wild raspberries and black pepper on the nose, with soft yeasty notes, spice and red fruits on the palate. There is a zing of acidity that brings something entirely new to the red grape, lifting its weight. Ageing : one year on the yeast after the second fermentation in steel, allowing the powerful fruit to do the talking.

This Brut Rosé is made almost exclusively from Pinot Noir grapes from the Montagne de Reims region, and from Premiers Crus and Grands Crus. Just 10% of Chardonnay from the Cotes des Blancs rounds out the blend. Seriously fruity.

Interestingly made from Merlot and Semillon grapes and made in the traditional method employed for all Cremants and Champagnes. A lovely pale lemon colour, with notes of lemon, melon and green apple, this has a fine streak of acidity and tangy citrus. With its lifted citrus flavours and its fresh aftertaste, it is ready to drink now.

White pepper, dried herbs, chalk, mint and citrus make a strong opening impression. I especially like the energy and tension here, but there’s plenty of depth, too.
