Final assemblage: 55% Syrah, 35% Carignan & Cinsault and 15% Grenache Noir. Organically grown on schist, basalt and grés (sandstone) that yielded beautifully balanced fruit but at a very low 15 hl per ha. Manual harvest into small caskets. The Syrah and Grenache were both destemmed and vinified separately in 2yr and 5yr old 500l barrels (Saury). The Carignan was vinified on stems and in steel tank. The Cinsault was destemmed and vinified in steel tank. Natural yeast (no inoculated yeast used). Breeding took place in 2yr and 5yr old 500l barrels (Saury) for the Syrah and Grenache, and in steel tank for the Cinsault and Carignan, for a total time of 32 months with no batonnage. Bottled without fining or filtration. Bottled with a very, very low addition of sulphites (no sulphite additions at any point previously). No other additions at all. The wine has interest, complexity and depth, it is beautifully resolved - an elegant and pretty red-fruited wine with delightful freshness and length. With this quality and with the wines age, it’s a very nice offer indeed. The wine was selected (with one of the very highest scores) as one of 80 ‘Coups de Coeur’ by Guide Gault & Millau for the year 2020 Review below - "The colour appears black, intense with purple reflections. The nose presents an elegant maturity with predominantly fruity cherry and blackberry punctuated by spicy notes (pepper, cinnamon). In the mouth, the cherry is very present with other stone fruits (plum, prune). The leather and cocoa prolong a very fresh and digestible finish. The texture is dense and velvety. A complex and racy wine that evolves beautifully without losing its beautiful tension".

Established in 1446, Etienne Parahy is known as the first owner of the vineyards and the estate 'Puig Parahy'. In those near 600 years, the estate has passed through 19 generations to current owner and vigneron Georges Puig (the first son of each new generation is named 'Georges'). Nestled in Les Aspres region, a wonderful mixed-soil and fresh terroir of the Roussillon which is found between Mt. Canigou and the Mediterranean sea. The estate has a rich history producing outstanding rancio sweet wines that develop and live for decades, sometimes even centuries. Bottles from the 1800s are still available today. The estate was replanted in 1878 after phylloxera wiped out all of the vineyards. Many of these vines are still producing wonderful old vine fruit of outrageous quality that is carefully and naturally handled to produce a great range of dry table wines and VdNs of many styles. This is special wine. Ancient vines of Carignan, Grenache and Mourvedre and native, wild yeasts from this historic Roussillon estate have produced this pale, bright and gorgeous mid-red coloured wine - looking exactly like a current hipster favourite. The nose is alive with prickly bright fruits intermixed with beautiful secondary and tertiary aromas of old books, furniture and childhood memories of churches and other magnificent and curious things of wonder. The palate is equally as interesting and as equally sparkly bright and refreshing. But so rewarding, resolved and complex. An utter marvel from this unsung fresh terroir in the magnificent Roussillon.

The 'house' Barolo from Rivetto. The only producer who grows organically and biodynamically and is certified in the DOCG. This beautiful Serralunga is grown on soils of serravallian origin, which are clay-limestone. Soil with sub-alkaline reaction, with presence of magnesium, calcium and iron. On east, south-east and north-east slopes at between 340-420 metres altitude from the vineyards of Serra, Manocino and San Bernardo. Selection in stages, carried out three times in the 45 days before the start of the harvest. Manually harvested as late as possible. The must sees stem and grape seeds removal, pressing and room temperature maceration for two days. Total duration of maceration is 20-25 days. The wine then see natural fermentation on its wild yeast at 28-30° C. Malolactic completed. The wines is then aged in large Slavonian oak barrels (30hL) for 30 months, aged in bottle for further ten months before release. . A pale, elegant example of Barolo from Serralunga. Violets, rose hips, tobacco and leather are surrounded by gorgeous red fruits and elegant tannins. Enrico works wonders in this area to produces such ethereal, beautiful wines with grace and power that shall drink well on release and develop further interest for at least twenty years from this superb 2019 vintage. A beautiful and pure expression of young Nebbiolo from one of the most exciting winemakers in Italy. After Gian Luca completed his Masters in Viticulture and Oenology after 11 years of study and worked as a wine consultant across Italy in 2011 he started his own small winery in the heart of his native Langhe. Within 3 years he won the Gambelli award for Young Winemaker of the Year. His small Segni di Langa estate is located in Roddi in Barolo country and working sustainably he takes a very minimal interventionist approach allowing each vintage to showcase itself. Making his wines in the 'garage' beneath his house he typifies the small scale, high quality, personal style of winemaking. Roddi, 220 m. South./South East facing. Two small vineyards planted by Gian Luca to Pelaverga Piccolo. Fermented wild and raised in clay Amphora. Something really rare! Verduno Pelaverga is the smallest DOC in the Barolo region in the far north, where the indigenous variety Pelaverga Piccolo grows. Quite a light colour, pale but brilliant and bright and oh-so fragrant with floral aromas dominated by roses, violets and super pure raspberry - both the berry and the leaves. Vibrant, charming and simply a wonderful, curious drink.

‘La Minuette’ blended rosé comes from La Livinière limestone terroir. Its pale colour and floral bouquet represent the ‘Minuette’ variety of rose planted in Kenya by Tim Ford in 1982, during his 25 years of rose production in Africa. A nod to both the past and the future, ‘La Minuette’ exemplifies estate values of tradition and modernity. Mourvèdre, Syrah, Grenache and Cinsault from outstanding organic Minervois La Livinière vineyards. A lychee-tinged colour evokes a very Provençal style. On the nose, finesse and elegance dominate, offering a refined aromatic bouquet. Notes of fresh grapefruit and tart raspberries blend harmoniously with vine peach, while cherry blossom adds a delicate floral touch. On the palate, the wine is gourmand, with flavours of strawberry and raspberry supported by fresh notes of clementine and bergamot zest. The texture is crisp and tangy, balanced by a light minerality on the finish. Really outstanding for the cash.

CWM Rating - Frist Clas; 98% Merlot, 2% Cabernet franc. 14.5% 3.55pH. A brilliant example of Merlot grown on limestone. Plenty of extraction but the tannins are ripe and supple and helps the fruit persist . Long and impressive finish. This is excellent and has been lauded by most wine critics.

100% Sauvignon Blanc from four terroirs: clay, limestone-clay, marl, gravel. 93/100 Jane Anson "Bright Sauvignon Blanc aromatics on the nose, this is good quality. Power, concentration and spliced citrus and slate minerality. Maintains momentum, easy to love. A yield of 31hl/ha, with 10 months ageing on lees with regular stirring in to fatten up the mouthfeel. An impressive La Louvière, stands out from recent vintages at this estate."

Vibrant, brick red leading slightly towards amber. Light fresh texture with notes of vanilla and dried berry, undergrowth, polished wood, dried fruitsand nuts. Scented with age and red-fruit and old-oak sweetness. Rich, very dry, smooth, developed. Firm tannins and good balance.

Remi Jeanniard’s neighbours say that he and his wife are always in the vineyards; even on 2nd January, they were seen out pruning the vines. Remi has just over 7 hectares of vines in and around Morey-St-Denis. The vines are much older than average, with all of his Vieilles Vignes village bottlings being at least 50 years old. This gives a natural concentration to the wines which are both well structured and elegant. Dried fruits, figs, cherries, currants, and violets. Exciting. Less plush than the jeunes vignes, but more vibrant and intense. Supple tannins.

Gilles Remoriquet is not a winemaker who rests on his laurels. He is forever looking for ways to improve his wines. Most recently he has been to the Jura to see a specialist about selecting the right blend of manure and has bought a second sorting table which eliminates under-ripe berries by flotation! Cuvaisons are long, giving a light colour yet concentrated, intense fruit flavours. Remoriquet is one of the top estates in Nuits but the prices have yet to catch up. At the top of the range the Vosne-Romannée 1er Cru au dessous des Malconsorts is situated next to La Tâche and tastes like it is! "Good meaty, powdery, cocoa dusted tannin through out. Persistent, savoury, ripe victoria plum and raspberry underneath. Long, serious, elegant"

Chateau Fargueirol is on great form and offers traditional Chateauneuf du Pape at a superb price. Ripe and garriguey nose with impressive concnetration but a nice easy going texture and ripe tannins that means it can be enjoyed young or after 3-10 years of cellaring.

THE NOSE The nose is full and varied, mingling flowers with fruit, and the vegetal with the mineral. The bouquet is tactile, subtly enticing us along a trail of powdery white flowers and nectareous apricot, followed by the freshness of rhubarb and mint and the minerality of ash. White pepper. THE PALATE Energy dominates on the palate. After a welcoming opening, the wine quickly becomes vibrant and then literally explodes with a surge of effervescence and tonicity. Focused by acidic and bitter notes, the finish brings a penetrating tautness marked by ginger, tobacco and toasted accents. PLEASE NOTE: We call this one 'naked' because it doesn't come with the jazzy gift box shown in the image.It's just a a bottle of gorgeous fizz on its own.

A pearly pink with a fine stream of bubbles. The nose is deeply perfumed with luxuriant notes of kirsch, ripe cherries, fleshy plums and cranberries. The palate has hints of brioche and fresh butter. Candied grapefruits and earthier notes. A full bodied Rosé with a long aromatic finish. One of the most awarded vintage rosé champagnes in the world, Charles Heidsieck Rosé Millésime spends a minimum of eight years ageing on the lees in two-thousand-year-old chalk cellars. It is made from a selection of around fifteen Crus throughout Champagne. The grapes which contribute the red wine content originate from Ambonnay, Bouzy, Hautvillers, Les Riceys and Verzenay. The delicate effervescence reveals the aromatic complexity of this blended rosé which is famed for its incredible harmony and depth

Fermented in steel or concrete tanks. Aged 12 months in barrel, 20% new. Deep cherry red and an impression of freshness in the aroma. Still lots of pure dark fruit, stony cassis and a hint of oak. On the palate, this is refined in texture, fresh in a warm year, with a touch of chocolate sweetness on the finish that seems to be from the oak. Elegantly structured by the tannins, tightly wound even with that chocolate smoothness on the finish. Needs time and should age thanks to the balance between fruit and structure.

Charles Heidsieck Blanc de Blancs is a pale, crystalline gold colour. The nose is characterised by aromas of mature Chardonnay; white peach, candied citrus with notes of lime, honeysuckle and fresh hazelnuts giving way to subtle hints of tangerine and lemon. On the palate, the Blanc de Blancs bears all the hallmarks of a Charles Heidsieck Champagne: boldness, generosity and elegance. Embracing yet light, it displays appealing mineral, slightly salty, iodine notes, and has a silky, creamy texture – unexpected from a Chardonnay – that leaves a lasting impression.

Very Limited presentation to commemorate Cambridge Wine Merchants' 30th Anniversary, presented in a cream and gold Ramos Pinto 30 Year Old branded box with exclusive CWM 30th Anniversary branding. Amber coloured with orange and garnet tones. The delicate green highlights of the meniscus is characteristic of old cask-aged wines and illustrates the quality and advanced age of this fine port. This complex, perfectly balanced port shows rich aromas of dried fruit and vanilla. Agitate the glass and spice aromas of cinnamon and cocoa are liberated. In the mouth, the attack is fresh, fine and delicate. Ripe, dried fruit softly emerges with almond and hazelnut, culminating in vanilla flavours which linger gracefully on the palate. Appreciate this elegant Port at the close of a fine meal with good friends.It should be served at 15º- 19ºC.

This is a richer, full bodied and more complex white wine with minerality and almonds. Tbh this wine is so special that it’s difficult to describe. Although it’s a heavier white, it can also taste light and even sometimes a little floral. It’s contradictory. And that’s why I love it. Serve it only lightly chilled. This is a heavier white so it can take on some heavier white meat dishes. But as Piemonte is the home of Risotto, we think a really simple cheese, pumpkin or saffron risotto is a great pairin Timorasso is one of Italy’s rarest grapes. It’s only grown in a tiny area by a few winegrowers. It’s spectacular, though. The Italians call it the ‘White Barolo’ and you know how obsessed everyone is with Barolos.

Tasted blind at the 10-Year On Tasting in Sauternes. The 2005 Château de Fargues has a rich and intense bouquet with layers of honey, dried peach, beeswax and acacia that soar from the glass. The palate is powerful and authoritative: intense botrytis-rich honeyed fruit with compelling mineralité underneath. It fans out in glorious fashion – a stunning de Fargues that is now beginning to show its talents. One of the top handful of Chablis growers with a deeply individual style. Long lees ageing - 18 months or so, late-picked but not botrytised fruit, reserved oak influence using mostly used 600-litre Demi muids. The results are a nod to Côte d'Or grandeur but distinctly Chablis, maybe Chablis x1.5 - these are seriously, excitingly concentrated wines.
