The Macallan Distillery is often coy when it comes to its name being associated with independent bottlings, typically opting for guises that leave us whisky lovers guessing as to the true origin of the spirit. However, there's no mistaking this single cask expression from Signatory, proudly boasting in-no-uncertain-terms the provenance of this seriously rare expression. This single cask of Macallan was personally selected by Signatory's Andrew Symington to be bottled as part of their Syminton's Choice range. Drawn from a first fill sherry butt after a quarter of a century of maturation, this is a powerful statement of sherried Macallan that will leave lovers of the distillery in awe.

BALLYBANNON farm is in Co. Carlowand the barley was grown by farmer TonyLender.
The barley was peated to 47ppm during malting with peat from Ballyteague, Co.
Kildare, and is matured in a combinationof 39% first-fill US oak; 21% virgin US oak; 21% Premium French oak; and 19% Vin Doux Naturel casks.
A small batch of seven barrels from Aultmore distillery has been used to create this Speyside Single Malt, distilled in 2011 and aged for twelve years.
Situated on the edge of the Foggie Moss in the heart of Speyside, Aultmore’s fermentation process lends itself to the identifiable ‘fragrant on the nose, substantial on the tongue’ characteristic.
A nose of vanilla and cinnamon spice moving on to a much more vibrant palate that shows chocolate, ginger and caramelised demerara. Leaves lingering overtones of orange fondant creams. Delightful.
Nose – Rich oak with a gentle nutmeg note. Sweeter aromas of baked ripe figs, sultanas and black cherries.
Palate – Fruit cake with toasted almonds and cinnamon. The juicy zestiness of oranges and mandarins mellows perfectly with manuka honey, muscovado sugar, baked apricots and an interesting white pepper note that provides even more complexity.
Finish – Creamy and spicy with dark chocolate, walnuts and dark fruits compote.
This single grain whisky was made with diverse unblended whisky brewing techniques and master craftsmanship developed over many years at the Chita Distillery in Aichi Prefecture. It features a light taste and delicately sweet fragrance.
There are so many complex layers of flavour, and it will be different for everyone. But, our blender Shona Macleod gets a gentle peat smoke on the first sip which reminds her of island home fires burning when she was growing up. It comes along with a toasted maltiness. She can also taste homemade apple sauce and smell machair flowers, particularly white clover which springs up on our west coast every summer. Mixed spices appear, and an old-fashioned sweetness from things like candied ginger, vanilla, and honeycomb. Finally, there’s a long, clotted-cream note, mixed with a lasting sense of new leather.
It will be a lightly peated dram, at around 12-15ppm
NOSE
Heavy with rich dried fruit, hints of mint and oranges covered with a dusting of cocoa. Faint vanilla and tobacco spice.
TASTE
Rich, chewy, rounded and smooth, with complex citrus, cinnamon and cocoa. Toffee, caramel, chocolate and spice notes abound.
FINISH
Silky smooth, almost creamy at first with a long, warm satisfying tail.
A viscous mouthfeel bursts forth to introduce a sparkling array of salty, sweet, and savoury flavours. Peat smoke, eucalyptus oil, minty chocolate and toffee mingle with smoked pecans, creosote, and tar. Subtle sweet pear crumble and fudge lurk in the background.

Lochlea Cask Strength Batch 1 is the first in a series of annual limited-edition bottlings. Each batch will be bottled straight from the casks without water, like trying samples from the warehouse itself! Master Blender John Campbell and the team at Lochlea have chosen Bourbon and Sherry casks this time, and every year will show further progression of our whisky. Despite the very limited volume available in each country, the few who manage to secure a bottle will experience a true undiluted and unfiltered window into Lochlea whisky.

TASTE: Lashings of heather honey and cinnamon, followed by chocolate, lemon drops and caramelised brown sugar.
Name because they changed their distillation cut points for a few month resulting in a more juicy, fruity liquid with notes of biscuits and dessert. A tiny bit more peat is coming through as well.

TASTE: Bursting with chocolate, coffee and heather honey, followed by notes of pepper, ginger and molasses, with banana and sultanas on the finish.
