Fermented with our Belgian house strain, this beer is crisp, refreshing and at 3.2% is oh-so-thirst crushing! The perfect beer to sup on as we are reminded it’s not too far away until we ease into the longer and warmer days, for catching up and making new memories with friends. After all, no other season can match the bounty of hope that greets us in the Spring. A base of Pils malt, 25% flaked oats and 25% wheat provide the background for hopping with Brewers Gold, Savinjski Goldings and a small dose of El Dorado – think dry, zingy, tropical. Trappist beer from the Orval Abbey in Belgium. A world-famous beer and rightly so. This Belgian Trappist beer is a delicious slightly sweet pale ale brewed with subtle, citrusy hops. So far, so normal, but then the beer is dry hopped and bottle fermented with Brettanomyces, which over time eats all the sugar in the beer and leaves behind a herbal-dry beer unlike any other drink in the world. In the mid 1800?s the most popular brew in the Brussels area was faro. With the base lambic beer being very tart lambic beer is sweetened with candy sugar and caramel. Lambic beer has to be the most unusual beer family in the world. Small farmhouse breweries near Brussels maintain a tradition for spontaneously fermenting wheat beers. No yeast is added, the magical micro organisms of the area enter the brew left in open vessels in dusty galleries overnight. Afterwards two fermentations take place, in wooden casks, the first over a week and subsequently over months, as the beer is stored. Lambics are esoteric specialties and very individual. Fruit Lambics by adding fruit to the base Lambic the result is a ?sweet and sour? refreshing drink

Our 5.8% Mixed fermentation Saison brewed using our constantly evolving house culture. Each release of this beer is a blend of barrels from every previous batch, similar to a Sherry Solera system (google it). This means some of the beer in your bottle will be 3 months old, some will be 2 years old, and the more we brew, the older that old beer gets. Get your head around that! This mixing of young fresh, delicate, floral beer and aged mature beer creates a multi-layered flavour trip of green apples and ripe pear, honeyed sweet apricots, hints of white pepper and sourdough tartness that finishes with fresh earthiness and pencil shaving bitterness (we’ve all chewed the end of a pencil at least once in our lives). A beer that is much more than the sum of its parts. Drink with Dim-Sum to experience this beer’s amazing versatility. While the beer is named for Chris and his wife Emily's first daughter, Saint Phoebe was a first century deaconess from modern day Greece. In 2020, this beer was made from golden mixed fermentation, barrel aged beer and 722kg of fresh, tree ripened Ebony Sun plums hand picked.
