BLENDING + SOUR + NINKASI Ninkasi has long been a favourite at Wild Beer due to its versitility of flavours that work so beautifully with food. We wanted to take this further by bringing in some acidity to balance with the rich saison character and so we blended in our infamous sour beer 'Somerset Wild'. The result was divine!

Orval
Trappist beer from the Orval Abbey in Belgium. A world-famous beer and rightly so. This Belgian Trappist beer is a delicious slightly sweet pale ale brewed with subtle, citrusy hops. So far, so normal, but then the beer is dry hopped and bottle fermented with Brettanomyces, which over time eats all the sugar in the beer and leaves behind a herbal-dry beer unlike any other drink in the world. Loaded with umami like flavours, a touch of caramel and a strong zesty orange pith flavour, it’s truly one of the best beers ever made.

Big Drop
Alcohol-free Stout. Forget the notion this is a beer style that has had its day. Instead, think of it as honeycomb covered in chocolate, because that’s exactly what it tastes like: rich, unctuous and an absolutely decadent treat of a beer.

The IPAs of yesteryear were brewed strong, bitter & hoppy in order to withstand travelling long distances/ageing - a vast difference to what we generally accept IPAs to be today. We wanted to make something that bridges that gap & brewed a barrel aged, mixed fermented beer, generously hopped with Nelson Sauvin & Amarillo hops. The resulting beer is fruity and funky with a hop character that will continue to develop over time.

What’s a pastry sour we hear you ask? Take the rich, doughy, velvety characteristics of a pastry beer and marry it with the tart, lip puckering sourness of a sour beer and hey presto, you’ve got yourself a balanced, sweet ‘n’ sour combination of the two. For that extra twist we’ve used Columbus hops to provide some subtle lemony, black pepper notes for a richer depth of flavour...de-lici-ous.

Bad Ass Bob is an American style Pale Ale that really showcases the Amarillo hop in all its orange, citrus & floral glory. A simple light malt bill and clean initial bitterness really lets the Amarillo stand out and be noticed. It is only one hop but it is a bad ass.
