The immaculate vineyards are a combination of evolved plantings from 1447 and much more recent plantings too. The winery has been fully fitted out with stainless steel, automatic temperature controlled tanks for fermenting and storing the wine. The primary vinification facility has been completely renewed with the best possible equipment for gently crushing, de stemming, pressing the grapes- in order to be able to maintain all the quality in the grapes.
Grapes are night harvested, to arrive cool at the winery. Crushed and de stemmed then pumped through a must chiller on the way to the press. Pressings and free-run fractions are separated for fermentation. Juice clarified by flotation then racked to stainless steel for fermentation at 10-15 deg C over 2 to 3 weeks. Centrifuged and cold stabilized prior to blending, filtering and bottling.

100% Chenin Blanc from two parcels, 60% from a block in the Paardeberg (Swartland) and 40% from the Polkadraai hills of Stellenbosch. Both parcels are grown on Granite soils. The combination of these parcels brings together the best of both regions and makes an incredibly sophisticated wine that is also generous and meets all hopes and expectation. The Paardeberg portion is from a bush vine vineyard planted on decomposed granite giving the wine its elegance, finesse, and focus. The portion from the Polkadraai is planted on Granite and lends characteristics of yellow fruit and depth to the wine.
In the cellar
The parcels are vinified separately before being blended just before bottling. Grapes were destemmed, pressed, and left overnight to settle in stainless steel tanks. The wine is then racked to 3rd fill 500-liter French oak the next morning. The wine spent 10 months on its primary lees without any batonage before being blended and bottled. No commercial yeast or enzymes were used during the winemaking process.

Caleras wines truly express the sense of place. Rather than follow the recommended path, Josh Jensen became a pioneer in search of the perfect spot on the globe to grow grapes. Taking his cue from the great domaines of Burgundy which have grown grapes in limestone soil for centuries, he set out in search of the perfect spot in California to create wines unique to the world but in the style of the greatest wines of France. Site selection was vital as he ventured off the grid to plant on the site of an old limekiln in the Gavilan Mountains of California. Today Calera wines still express that pioneer spirit and are revered the world over.
This is a richer, full bodied and more complex white wine with minerality and almonds. Tbh this wine is so special that its difficult to describe. Although its a heavier white, it can also taste light and even sometimes a little floral. Its contradictory. And thats why I love it.
Serve it only lightly chilled. This is a heavier white so it can take on some heavier white meat dishes. But as Piemonte is the home of Risotto, we think a really simple cheese, pumpkin or saffron risotto is a great pairin
Timorasso is one of Italys rarest grapes. Its only grown in a tiny area by a few winegrowers. Its spectacular, though. The Italians call it the White Barolo and you know how obsessed everyone is with Barolos.

Low yield, old vines on arid volcanic Mt Vulture up to 800m altitude. Two ancient grapes one famed in Roman times one pre-Roman (Greco = Greek, southern Italy was Hellenic before the Romans arrived, and what did they ever do for...). Basilicata is the forgotten mid-south but in wines terms it is extraordinary and fascinating.
Made by a super-modern outfit, they have lifted this into proper word-class status. Aromatic, it smells like green melon and elderflower, light, no oak, pure, snappy. A triumph.
