Axel Pauly
Axel Pauly is one of the dynamic young stars of German wine. He took over the Pauly estate from his father after having done vintages in California, New Zealand and other parts of Germany. Most of the ten hectare estate is situated in the village of Lieser in the heart of the Mosel Valley, with the exception of a small parcel in neighbouring Bernkastel. Fittingly, the label features the Mosel hills which, when turned on their side, reveals the Tres Naris (or three noses) of Axel, his father and his grandfather. Generations' Riesling was harvested from the family's steeply sloping vineyard in Lieser. This is an off-dry style white. Fresh hay aromas mingle with lemon citrus, pear and melon fruits. The sweetness and high acidity are well balanced, with a dry finish. On the palate, the wine is tangy, with subtle fruits and a hint of minerality. This would be delicious with a slightly spicy thai stir-fry.

The elegant crisp finish makes this a fantastic wine for all occasions. The fruit for Aloe Tree hails from the increasingly fashionable west coast of the Cape. Cool nights and sea breezes combine to extend the growing season, resulting in perfectly balanced, ripe grapes. The iconic Aloe Tree image is sure to be familiar to anyone who has travelled widely through the Cape and is an important part of the biodiversity which South Africa is famous for. The characteristic silhouette provides a backdrop to one of the most spectacular wine regions in the world where wines grow in harmony with the thousands of plant species that make up the Cape Floral Kingdom. Chenin blanc is well adapted for various soil types, but our premium grapes are grown on medium to lower potential soils. Yield levels are limited by winter pruning and by removing shoots and leaving two or three shoots per spur during early spring. Canopy management is required as it plays a major role in yield and quality to ensure an optimum microclimate within the canopy. With its vigorous growth, medium-sized trellises are required and shoot positioning are done to maximize canopy surface. Grapes are harvested at a minimum of 21.5°Brix, but we aim for 22°Brix. Once the Chenin Blanc grapes are harvested, they arrive at the winery where the fruit is gently pressed and only the free run juice is used. Using selected yeasts the juice then undergoes cold fermentation at 14 degrees Celsius for 2 weeks before lying on the lees for 3 months.

Chateau Suduiraut
This dry white Bordeaux from a great producer in Sauternes has a new name in 2021, Lions de Suduiraut Sec. Half of the wine is aged in oak barrels, the other half in stainless steel. With bright acidity and plenty of lovely citrus fruit the wine is ready to drink but will keep for 4 years.

Les Héritiers du Comte Lafon
Domaine des Comtes Lafon has the deepest and coldest cellars in Burgundy and they nurture some of the greatest dry white wines of Burgundy. Dominique Lafon has been in charge since 1985, taking over a domaine which already had a reputation for outstanding, if irregular whites, and potentially good reds. When Lafon took over the domaine, most of his vineyards were leased out on a share-cropping basis. It was only towards the end of the 80s that he managed to reclaim all the vineyards and thus have full responsibility for them.The white wines are now consistently among the best in Burgundy while since 1989 the reds have reached the top division. The domaine is now cultivated according to biodynamic principles with no use of herbicides or chemical sprays. All the wines are barrel-fermented, using new oak for the 1er Crus upwards. This is the very pinnacle of White Burgundy with superlative fruit, power, complexity and total harmony being the wines' hallmarks. In September 1999 the Lafons bought a domaine in the Maconnais at Milly Lamartine, sold under the label of Les Héritiers du Comte Lafon. Further vineyards have been bought subsequently, and from 2009 there is a contract in place to farm the vineyards of the Chateau de Viré. This wasnt produced in 2019 due to frost; the surviving grapes were declassified to Mâcon-Villages. There was no lasting damage, and its a real success in 20. This spot ripens early, so the grapes are picked at the start of harvest. Made in oak foudre, this is fruity and charming with crisp peach fruit and a zesty finish.

Biodynamic farming although not certified. 100% Roussanne planted on their highest vineyards, a steep north-facing slope in the foothills of the Cévennes mountains. Isolated vineyards surrounded by herbaceous shrub and woodland on schist and basalt boulders. Hand-picked at 20-25 hl/ha, Five days' on skins then 48 hours of cold settling before racking. Spontaneous fermentation, no enzymes, no fining, minimal sulphur and sulphites. Carbon dioxide nap used to avoid oxidation.

JancisRobinson.com: Dry-farmed at 480 m in Alagni, central Crete. Skin contact for 10 hours for 5% of the grapes that are harvested early and fermented separately. Fermented in tank at 1719 °C and aged 4 months on lees. TA 5 g/l, pH 3.33, RS 2.18 g/l. Intense aroma of bayleaf and rosemary, dramatically herbal without being green or unripe. The small percentage that had skin contact has given this a brilliantly judged texture, just a very slight grip, so it is not just about the aromatics. Moderate acidity, but freshened by that grip and the low pH. Wonderfully aromatic and so true to the variety, without being a caricature. (Julia Harding). 16.5 points

Producer Profile The Cramele Recas Estate, owned by Englishman, Philip Cox and his Romanian wife Elvira, have put in a huge amount of work into transforming their slice of grape growing history into a contemporary winemaking haven. The immaculate vineyards are a combination of evolved plantings from 1447 and much more recent plantings too. With recent investments into modernising and improving their winery, they regularly host world class flying winemakers, vintage to vintage, to work with their team. This enables them to create top quality wines and constantly challenge themselves push innovations and approach winemaking with an open mind. Viticulture The winery has been fully fitted out with stainless steel, automatic temperature controlled tanks for fermenting and storing the wine. The primary vinification facility has been completely renewed with the best possible equipment for gently crushing, de stemming, pressing the grapes- in order to be able to maintain all the quality in the grapes. Winemaking Grapes are night harvested, to arrive cool at the winery. Crushed and de stemmed then pumped through a must chiller on the way to the press. Pressings and free-run fractions are separated for fermentation. Juice clarified by flotation then racked to stainless steel for fermentation at 10-15 deg C over 2 to 3 weeks. Centrifuged and cold stabilized prior to blending, filtering and bottling.

Wild & Wilder
2020 vintage conditions in were perfect in many ways. A warm, dry early season gave way to a mild, sometimes cool, February and March which allowed for ripening at a very relaxed pace. Small yields across all regions concentrated the fruit flavours while the dry conditions led to low disease pressures. A vibrant, textural white with hints of almond blossom, quince and ripe pear. Tangy, almost exotic but pithy and delicious.
