Valdespino
The bouquet shows notes of both the biological and oxidative ageing, yeast, bread, but also dried fruits and a hint of toffee, caramel and leather. Very dry, very complex, with a generous body and well balanced acidity. Tio Diego is the flagship Amontillado from Bodegas Valdespino, directly related to the Fino Inocente. Both wines are made with must from 56 ha of vineyards in Macharnudo Alto, fermented with indigenous yeasts in old oak casks instead of temperature-controlled stainless steel like all other sherry producers nowadays. They fill around 200-300 casks per year, giving them a large array of slightly different wines. Once fortified to 15% and aged under flor for at least one year, the casks are all tested and enter the solera of either the Fino Inocente or the Amontillado Tio Diego. Mind that one is not exactly a longer aged version of the other, they are separate wines, made from the same must. Both parallel solera systems have a similar set-up (10 criaderas + solera row) but the rotation is different: while the Fino is bottled twice a year (spring and autumn) and refreshed with new sobretabla, the Amontillado is only bottled once a year by the end of autumn. Slower rotation results in a higher average age: while Inocente is 10 years old upon bottling, Tio Diego is around 18 years.

Dominio de Pingus
Made from Tinto Fino (the grape that established the region’s fame, also called Tinta del Pais, a local variant of Rioja’s Tempranillo) and a tiny small percentage of Grenache, mostly older vines from 630 plots from 21 different villages. Made at seven different cellers using two selection tables and their own tanks. Vinification takes place in traditional concrete tanks and has aged during 18 months in a mix of second and third year oak barrels used for the Pingus and also in large Foudres, avoiding voluntarily the use of new wood. This wine is available to order En Primeur. When you order wines En Primeur you buy wines that are as yet not available for physical delivery but are available for purchase. They are sold without Excise and VAT taxes and an invoice is issued soon after order, for payment. Excise and VAT may become payable when the wine physically arrives in the UK. When a wine arrives in the UK is a matter of when it becomes available from the producer and when we are able to import it. Normally wines will be shipped 2-3 years after harvest, but it can take longer or less than that. When the wines are shipped to the UK they can either be transferred, under bond, to an account in a Bonded warehouse or delivered duty paid. For Under Bond deliveries. Please indicate by return if you wish the wine to remain under bond and before the wine arrives provide details of the bonded warehouse address and the account you would like it held under. 2013 is a subtle, elegant, fresh, vertical, complex, silky, and well-defined vintage. This wine is a true paradox, enjoyable to drink now, but timeless when allowed to age in bottle. The rainy end to the harvest left its imprint on the wine from this vintage. 2013 was a year to spend time in the vineyard, tend to it with care, and not rest on your laurels during harvest. A more elegant, subtle, and complex profile. The grapes are harvested from the 40 hectares used to produce Unico, a wine that ages at least ten years between barrel and bottle, representing one of the world's longest ageing processes. For the first phase, we used 225-litre French and American oak barrels to start to structure the wine; the second phase involved using 22,000-litre wooden vats. A long, complex, yet wonderful wine construction, during which they obtain endless nuances, definition, texture, and depth over time. This incredible terroir and the unique ageing process make our wines timeless when they aged.

Broad palate with saltiness and concentration, very toasty flavours. Rich and impressive. Imperative tasting for sherry lovers." Cracking value here for an outstanding 100% Palomino, single-vineyard fino sherry rarity from the calcium-carbonate-rich, ‘albariza’ white soils of the celebrated Macharnudo vineyard. Light bodied with low acidity, fino sherries have been ‘biologically’ aged in partially filled casks under a film of flor yeast which shields the wine from oxidation, whilst reducing glycerol levels (and thus body). This one’s super-refined, tangy, crisp, texturally delicate but also complex, with an average age of 10 years: think almonds, moss, sea salt, green apples and toasty yeast. A ludicrously low price tag for the wine world’s best-kept secret. Relish as soon as possible. One for white asparagus, griddled/steamed green asparagus with aioli/ hollandaise or grilled asparagus with romesco sauce/poached eggs. Of course, it’s also dreamy with a plate of ambrosial jamón ibérico! An open bottle should be drunk within two to three days. Gently chill and serve at 8°- 9°C (I recommend taking the bottle out of the fridge about ten minutes before serving).

Xarel-lo 100% Producer Profile In the little town of Vilafranca del Penedes in Cataluña, Irene and Laurent are challenging the traditional perception of DO Penedes wine. Converting their vineyards from the typical Penedes high yields and abandoning all forms of chemical treatment and fertilisers, they follow basic organic practices. Much of the construction and equipping of their cellar was modest and homemade, including building their own tanks. Production remains small, yet as they identify further small vineyard sites their range has extended to include distinctive wines from the indigenous varietal Xarel-lo, which they choose to do extended fermentation with, using indigenous yeast and it is then left on its lees to increase the richness and compexity. Viticulture With vines trained gobelet style, the vineyards are approximately 45 years old, on clay and limestone soils, yielding approximately 4000 kg / Ha. Practicing lutte raisonnée. Winemaking Vinification in 228l and 700l french oak barrels, fermented with wild yeast, after fermentation 2/3 parts are aged in 700 litre French oak barrels and 1/3 parts in stainless steel.

Marqués de Burgos is the Ribera del Duero operation of Bodegas LAN. Established experts in Tempranillo in Rioja, they embarked on a search for prime vineyard sites within the Ribera del Duero region, where this famed grape also thrives. Their thorough search led them to the village of Quintana del Pidio and old bush vine vineyards producing low yields of very intensely flavoured grapes. María Barúa is at the winemaking helm and perfectly marries the exuberant berry fruit aromas of Tempranillo with subtle spiciness from measured use of oak. On the nose, pronounced aromas of wild berries are married with floral notes and hints of vanilla and liquorice. Full bodied on the palate, with firm but ripe tannins and a refreshing acidity, which carries the concentrated flavours onto the lingering finish.
