It has juniper and other gin style botanicals but it is not a gin because it uses the malted barley spirit ie whisky new make spirit that would become the Nc'Nean Organic Single Malt. This botanical spirit from Scotland’s first 100% organic distillery Nc'nean was created with a combination of the distillery's barley spirit and ten botanicals, such as wild bog myrtle, sorrel, heather and thyme. It was distilled a third time by Beinn an Tuirc on the west coast and bottled at 40% ABV. Filey Bay hails from the Spirit of Yorkshire Distillery, and the coastal whisky combines both pot and column still whiskies aged in a combination of bourbon and sherry casks. Whilst the overall style remains light and fruity, with familiar notes of vanilla and citrus, the extra maturation time gives Filey Bay Second Release a more rounded flavour with added depth.

This coastal-influenced blend from Adelphi was made to honour the partnership between esteemed whisky writer and industry veteran Charles Maclean and Ardnamurchan distillery. Named after, not only Charles’ nose but by chance, a landmark near the distillery. Distilled and filled into bourbon casks and then finished in calvados casks for two years. Being aged for two years in casks that previously held French cider has given this soft and honeyed single malt a certain certain magic has added a crunch, almost like an apple. Fresh crispness and sweetness of green apples together with candied fruit and citrus zest.

Stewed fruits, Seville orange and chewy toffee with some warm gingerbread spiciness emerge first, with hints of peaches and cream and caramelised apple underneath. A little earthy clove and black peppercorn add depth among burnt sugar and some tropical fruit.

Nose: Coastal peat smoke, vanilla and tangy and bright citrus zest. Palate: Maritime peat, ripe orchard fruit, warm oak and a gentle, warm black pepper spice. Finish: Lingering peat with a subtle seaweed salinity.
